Tough to choose between baking a cookie, cheesecake or brownie? Well, then have all three-in-one by baking these delectable bars! What a year 2020 has been, Alhamdulillah! I don’t know what to say. I have one more post coming up tomorrow so I will leave a little bit for that. But the major news this year is that after more than 19 years of having a job, running around like a headless chicken, trying to manage work and family along with studies first and then children, almost breaking down and then pulling myself up, I have decided to take a break. The decision has not been easy. I guess once you get the feel of earning on your own, contributing to the family expenses and investments, it isn’t easy giving up on it. But I guess I am done with trying to out do myself all the time,…
Chocolate Butter Cake
A moreish and decadent chocolate butter cake, topped with a chocolate custard frosting… Apt for any celebration! I think I will start with a bit of personal news. 😀 Weekend was quite relaxed with a staycation in a beach resort, after a really long time. HD and the girls enjoyed themselves in the pool while I took time for myself by lazily being on bed with a book along. The surroundings were beautiful since they had an amazing beach, but it was so cold that I couldn’t stay out as much as I would have loved to. It is finally starting to get cold, but unfortunately it is blowing most of the time and I can’t stand the itching that dry skin can give. I am not so fond of slathering myself with a lot of creams all the time, but now I have no other option. …
Chicken Cheese Pie {Using Samosa Sheets}
A simple pie using samosa sheets as the pastry, and a delicious chicken and cheese filling… Isn’t necessity always the mother of invention? Whoever said that deserves a big pat on their back. It feels appropriate in any field that you may be in, including cooking. This recipe was born out of the need to do something different of the very limited samosa sheets I had in our fridge. I have a family who is crazy of samosas. But I am not fond of making them because I struggle with making proper triangles. Not that my family really bothers, but it affects my self-esteem. Hehe… Unlike other Ramadans, this time we had made samosas a lot of times because my SIL used to do the shaping along with the girls and she does a better job at it. 😀 So when I had hardly a few sheets in…
Eggless Fruit Cake {Non-Alcoholic!}
A deliciously moist fruit cake, apt for the season! The dry fruits are soaked in orange juice, so it is 100% non-alcoholic and baked without any eggs! This recipe barged its way into the Bakeathon for all good reasons, from not being a part of the plan. I am not a fan of fruit cakes. I somehow can’t stand the dense cakes that you get from the bakeries. The texture and the general sweetness just puts me off. If somebody offers me a piece, I do eat it because I don’t know how to say a “no”. But it surely isn’t something that I enjoy eating unlike most cakes. That can be a reason why I never attempted baking a fruit cake in first place. The other reason has to be the time taken to make it. The chopping of the fruits and nuts and then the time…
Toffee Chocolate Pastry Tarts
Sweet tarts made with puff pastry and filled with a decadent chocolate and toffee filling… As you may be aware if you read the blog, this month we are having all baking recipes as a part of the Bakeathon. Today it is time for a chocolate based recipe, and even though the puff pastry is not chocolate flavored, you can still forgive it when you bite into these decadent tarts. Hehe… Let me let out a secret here. I bought two packs of puff pastry sheets, used 14 of them for these chicken mushroom tarts and hid the remaining six to make these deliciously sweet tarts. Has that happened to you? Hehe… Sometimes, when my head hits the rut and I lose my interest in cooking, all I do is to go through my cookbooks and pick one. I just randomly flip and read through any recipe…
Baked Chicken Rice Casserole with Broccoli
A quick fix lunch or dinner casserole, with rice, chicken and broccoli, with an extra cheesy layer, baked to perfection… I always classify myself as a “lazy cook”. When readers discover blogs and then go through recipes, they automatically classify the person who writes the blog as “a great cook” or “a chef”. I would never mention myself as such. Give me a chance and I will be more than happy not to cook. I started this blog wanting to tell myself that cooking can be interesting, intriguing and stress releasing, and then this space became a part of my life before I even knew. There is always a constant thought of having to give it content, but Alhamdulillah, by the Almighty’s grace, I have never found it difficult. Somehow, ideas have kept pouring in and experiments have kept working out – not that I don’t have my…
Do Nothing Cake | Tornado Cake
A classic American cake, that involves doing “nothing” and yet have something purely decadent! I am sure you are intrigued by the name. I was too, when I first saw it on Sadia’s space. The concept of blending everything at once, pouring and baking piqued my interest. I immediately pinned it up and decided to bake it as soon as I can. As is with me, my “soon as I can” doesn’t have a cut-off time. While I was setting up my time table for the Bake-a-thon, I immediately jotted it down into the list. Since March, we hardly have guests and I have been trying to make smaller desserts but this one was made all for ourselves and we cleaned it up in the space of two days. Yes, four adults + 2 fairly eating children who aren’t keen on pineapples, yet it was emptied. Hehe… So…
Nutella Loaf Cake
A buttery, indulgent and moist cake with Nutella… I have had very general posts over the last week. We had a long week off during the National Day and then immediately after that my sister and family landed for a very short stay. We literally had a whirlwind three days, where we hardly went anywhere, but were so busy that we had no time to breath. I took a break from work to be with them and then Wednesday was spent literally sulking in their absence. Hehe… I am one sulker big time. I take time to get back to normal when there are quick changes in circumstances. I don’t know when I will learn to actually take life in my stride and be consistent with the way I behave… Does anybody learn that vital life skill? If yes, then how? I would love to read more in…
Chicken Mushroom Tart
An easy puff pastry based tart, with a creamy mushroom and chicken filling… For today’s Bake-a-thon post, it is one of my convenient store favorites. I am someone who loves to eat while driving. I wish I could stop that habit! I get hungry each time I drive that I would either need coffee or something to nibble on. It can get really irritating at times to gorge on all those calorific yet delicious snacks that can be picked up from the bakery corner of the petrol pump convenience store, just like these tuna mayo sandwiches. Of late, I have come to fall in love with the chicken mushroom tarts and it has been a part of my snack list, every time I drop in for something. I totally loved the shredded chicken and the chunky mushroom in a very delicious white sauce. The tart is round and…
Quick Cinnamon Rolls | Cinnamon Rolls in 1 hour!
Just the apt cinnamon rolls for an abrupt craving – gets done in an hour and tastes oh-so-glorious! There is something with the Bake-a-thon and cinnamon rolls. In the first Bake-a-thon I participated, I posted these Coffee Cinnamon Rolls and then a year later, this chocolate version. Last year, I had no cinnamon roll, but this year I do! Hehe… I already have a regular cinnamon roll recipe, with an option of making it eggless as well. My next target it to try making one with baking powder, so basically a no-yeast recipe… hehe… I have such cinnamon roll fans in the house! I have personally never liked cinnamon rolls. While growing up, we never ate them and umma loathes cinnamon with her heart, so much that I don’t even remember her keeping that spice at home. When she went to the US to be with my…
Chocolate Coffee Meringue Brownies
Gooey fudge brownies, with a chewy coffee flavored meringue topping… While I was arranging my posts for this month’s Bake-a-thon, my eyes were constantly on these delicious brownies I baked for B’s birthday. Do you want to know when his birthday was? I think I can tell you… hehe… His last birthday cake, which was the Mango Mousse Cake, also took its own sweet time to make it to the blog. Maybe you can go to that post to check when it is. 😉 Like I mentioned in the Tahini Banana Cake post, I am doing a format of sweet – savory – chocolate for this month’s posts, so this one had to be this delicious brownies. I found this recipe in the Spinneys magazine I had bought myself right before we were completely locked down at home. Those couple of months being completely at home was…
Savory Bread Pudding
A savory bread pudding, with an spiced egg custard, sausages and loads of vegetables… Can either be a brunch or a super early dinner… Food ideas have always come by in interesting ways for me. It can be a memory associated with it, or an idea coming off from some food I may have eaten some time ago, or simply by staring at the ingredients in the fridge that need an urgent makeover, to avoid going into the bin. The latter keeps happening to me because sometimes I buy stuff without thinking too much and then they threaten to ditch me. It mostly happens with me on vegetables – guilty as charged, your honor! I end up crying and promising myself that I won’t do anything like that again, but alas, history keeps repeating itself and even though I have minimized it a lot, it still keeps happening……
