Onion Marmalade | Onion Jam


A delicious onion marmalade, that goes amazing in any sandwich…

 

 

At the moment, it looks like I am doing only posts related to challenges. Somehow, that push to try new recipes is hardly there, so trying challenges seem to be the way to do it. For this month’s Shh Cooking Secretly Challenges, the theme as given by Preethi Tandon was that of “Jam, Jellies, Relishes and Chutneys”, with a disclaimer – no Indian recipes. That actually made the theme all the more challenging and interesting. Indian cookies has a lot of relishes and chutneys, so removing that cuisine off completely made me look into other options. I was paired with Poonam and we had a little discussion regarding the same. It took us time to finalize our recipes for the challenge, but I am excited about what she made with her secret ingredients. While for me, my secret ingredients were cider vinegar and butter, which beautifully went into this delicious relish…

 

Onion Marmalade or Jam is nothing, but caramelized onions, that are made a little sweetened, and hence has a sticky texture. The ingredients used are bare minimum – the fat in the form of little butter and little oil, garlic, some sugar, apple juice, vinegar and basic seasonings, along with of course, lots and lots of onions. The onions need to be thinly sliced so that they caramelize uniformly. If you have a mandolin, use it for uniform slices, while I did the job with my bare hands. Hehe… The extra ingredient that is needed is patience. In order to ensure that the onion doesn’t burn, the flame needs to be kept on medium-low and you have to constantly stick in your spatula to move them around, to ensure proper coloring. The juice and the vinegar adds an additional sweet and tangy layer to the marmalade. Most of the recipes I found added wine, but I was glad to find this recipe, upon which I adapted my recipe. As you can see, I did cook down the fluid to almost nil, but you can switch it off to keep some fluid for increased spread-ability.

 

If you are wondering how you can use it – spread them on a piece of toasted baguette or even just bread and have as it is. Another way is to use it as a layer in your burgers – caramelized onions go amazingly well with meat. You can simply add a tablespoon of this marmalade into your chicken salad sandwich mix to give it a delicious edge. See, the options are plentiful. 🙂 Off to the recipe…

Onion Marmalade | Onion Jam

Ingredients

  • 500 gm red onions peeled and sliced thinly
  • 25 gm butter
  • 1 tbsp olive oil
  • 4 garlic cloves peeled and grated
  • 1/4 cup brown sugar
  • 1/2 cup apple juice
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  • Heat a pan. Melt the butter and add the olive oil. As it heats, add the grated garlic. Fry till crisp.
  • Add the sliced onions. Saute with a pinch of salt, till the onion just wilts.
  • Add the brown sugar all over it. Keep sautéing it till the onion starts caramelizing and becomes golden brown.
  • Now add the apple juice and the vinegar along with the seasonings and cook till it is evaporated, the onion becomes brown and is sticky.
  • Switch off and allow it to cool completely, before transferring into a clean jar.
  • Store in the fridge and use on toasted bread as is, or as spread in meat sandwiches.

Notes

I have dried up the jam, however, if you need some fluid, just switch off without drying off all the juice in it.

    I’ve yet to try onion jam, never had it. Am so tempted to give this jam recipe a try. Can already imagine the flavour of this savoury jam with some good cheese in my sandwich.

    I love onion as a spread or I would say when it is cooked with some salt, butter or sugar. Love the caramelized taste it imparts. I would love it on my bread or as a side to simple dal and rice.

    Onion jam sounds wonderful. On of my kids loves onions and I am sure this will be the go-to bottle for him. Any particular flavour change with white onions as red are at times hard to come by.

    Onion marmalade sounds interesting. A nice way to make a jam from caramelized onions . The sweetness after caramelising the onions is very flavorful and gives a nice crunchy texture.

    The onion jam sounds absolutely wonderful! It reminds me of Subway’s sweet onion sauce. I think your jam would taste just as lovely in a sandwich or wrap. Definitely trying this out. 🙂
