Onion Marmalade | Onion Jam

Ingredients

  • 500 gm red onions peeled and sliced thinly
  • 25 gm butter
  • 1 tbsp olive oil
  • 4 garlic cloves peeled and grated
  • 1/4 cup brown sugar
  • 1/2 cup apple juice
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  • Heat a pan. Melt the butter and add the olive oil. As it heats, add the grated garlic. Fry till crisp.
  • Add the sliced onions. Saute with a pinch of salt, till the onion just wilts.
  • Add the brown sugar all over it. Keep sautéing it till the onion starts caramelizing and becomes golden brown.
  • Now add the apple juice and the vinegar along with the seasonings and cook till it is evaporated, the onion becomes brown and is sticky.
  • Switch off and allow it to cool completely, before transferring into a clean jar.
  • Store in the fridge and use on toasted bread as is, or as spread in meat sandwiches.

Notes

I have dried up the jam, however, if you need some fluid, just switch off without drying off all the juice in it.
