A very easy granola, crunchy and loaded with nuts and dry fruits, made on the stove top…
I am looking at my homepage and getting a little jittery. There are far too many savory recipes on the blog, but they are “serious recipes”. Once upon a time, my sister had commented that my blog didn’t have many “serious recipes” because of the amount of simple recipes I had at that time. I hope she is feeling better now… 😉 Having said that, I have been missing my family, whether it is my parents or my sister. At times, my mind just goes into the thoughts of the summer vacations last year. We had so much fun that time. I had also gone home three times then, so I got enough of my parents too. But come this year, we haven’t travelled anywhere, and I have come to realize how important a change in atmosphere is as much as you can afford to. I have no regrets of not travelling, but sometimes I silently wish if at least some local plans had worked out. Meanwhile, we had a very sad weekend, where we lost a very chirpy young soul to a gruesome accident in Oman. His brother had gone in a very similar way a few years ago. It was really shocking, saddening and reality seeking at the same time, that “Every soul shall taste death”… May Allah give the deceased his deserved in the Hereafter and give his young family and his parents the sabr to bear this loss… I really can’t imagine… 🙁
Today, I am sharing a very simple stovetop granola recipe. I already have a handful of granola recipes – regular granola, chocolate honey granola and cookie butter granola, just to name a few – on the blog, but they are all baked in the oven. But if you don’t have an oven, you don’t need to despair. You can still make granola on stove top, even though you just need to stay close to it and keep stirring it to ensure that you don’t end up burning the oats. “Sabr ka phal meeta hotha hai” – the result of patience is sweet… this proverb really works perfectly for this recipe. Do not overdo the oats too, just till a nice aroma comes and it looks golden brown. While it is allowed to rest on a flat plate, it tends to crisp and become really delicious. I love eating my granola with yogurt, but here I kept it on the side of vanilla pudding made from the Jello pack and it was amazingly delicious. Off to this simple recipe…
Easy Stovetop Granola
Ingredients
- 25 gm butter melted
- 2 tbsp coconut oil
- 500 gm rolled oats
- 200 gm mixed nuts and dry fruits
- 2 tbsp honey
- 1/3 cup brown sugar
- 1/2 tsp salt
Instructions
- Heat a large sautéing pan, let it dry completely. Switch off.
- Combine all the ingredients and toss it well to coat as much as you can.
- Switch off the flame, keep on medium-low and let the mixture cook. Keep stirring in between to avoid the mixture from burning and reduce the flame if it does. Do not cover the pot.
- After 30-40 minutes, you will notice the oats flakes getting crisp. Switch off.
- Spread the granola onto a flat surface and allow it to cool completely. The granola will get crunchier as it sits.
- Store in an airtight container and use in 10 days time. Store in a dry, cool place. Enjoy with yogurt, milk, pudding or on its own!
