I am coming back to the Blogging Marathon after a hiatus. Somehow, I have mentioned it before and still mention it – this series by Valli gives a much needed push when it comes to blogging. You may have noticed that ever since this year has started, I have been going slow on my posts purposely, since I don’t want blogging to become a burden for me. I must say that the move has helped me tremendously to relax and concentrate on other things in life. 😉 When I need the motivation, I know that this initiative by Valli will be there to get me pepped up. Can you believe that this month is #98? Wow… That’s a really long time… 🙂
For this week, I chose “Kid’s Delight – Snack and Bites”. You may have already seen my event declaration post a couple of days ago. Actually, I had forgotten that I had signed up and then a random checking of my mails made me realize this. So of course, I had to choose this as my theme. 😉 But then, since I have children and their school is closed for three weeks till their next academic year starts, I really didn’t mind taking it either.
My girls go to their babysit while I work and usually I have no pressure to cook anything extra. But many SAHMs have the constant thought of what to make for the kids who are extra hungry during holidays. So this series is really going to be of help for those pangs! The first recipe I chose to post are these super easy pancakes, that can multitask as breakfast, mid-day snack or afternoon snack. This is something I make very frequently, since it is more of a mix and make recipe with no complications whatsoever. Kids love anything mini, so you don’t even have to give them any side along with it, since it already sweet. Off to this simple recipe…
Mini Vegan Wholewheat Pancakes
Ingredients
- 1 cup wholewheat flour
- 1 tsp baking powder
- A pinch of salt
- 2 tbsp brown sugar
- 1 tbsp coconut oil
- 1 tsp vanilla extract
- Water for batter
- Coconut oil to make pancakes
Instructions
- Whisk together the ingredients from flour to sugar till well mixed.
- Add in the oil and vanilla, pour water slowly and whisk well till you have thick and smooth batter.
- Heat pan, drizzle little oil. Pour a tablespoon of batter for making the mini pancakes, flip and cook till done.
- Serve warm!

Fantastic pancakes with easy peasy recipe. Though I make waffles but somehow pancakes always take a back seat. May be now i will. And i agree that this marathon, apart from learning, gives the required push and may be this is one of the reasons I am here.
