Date Walnut Cake

Every year, twice a year, my Christian colleague would bring this date walnut cake from Caesar’s bakery. It is the most buttery cake I have ever eaten, especially from the outside. I am never a fan of cakes from outside as they normally leave this dirty layer on top of the tongue that doesn’t go off even after cleaning. But this particular cake was something I could continously eat.

 

I have been wanting to try a version of it in my kitchen and that finally happened in my sister’s kitchen on a beautiful drive towards Kent Island. That was one picturisque place that we had visited in the USA. A long drive on a beautiful bridge over the Chesapeake river and then the view over the river was amazing. It was one of the most beautiful sunsets I had ever seen… Each time we would go out, I would bake something or the other. My sister had this huge box of Medjool dates which was perfect for making this cake, that I adapted from here with some minor changes. I already have an eggless date cake recipe and then the sticky date pudding, which is an absolute favorite.

 

This cake has some butter along with eggs to give it some fat. Just like most of the date cake recipes, this recipe too needs some soaking time for the dates before going ahead with the rest of the batter. The soaking ensures that the dates softens and tastes way better in the cake. I love walnuts and dates, they both are such an amazing combination together, so naturally it had to be in this cake. Hehe… Off to this super simple recipe as the next recipe for the Bakeathon 2021‘s theme of “Fruit n Nut”…

Date Walnut Cake

Ingredients

  • 15-20 medjool dates pitted and chopped
  • 1 tsp coffee granules
  • 150 ml boiling water
  • 1 tsp baking soda
  • 120 gm butter softened
  • 3/4 cup brown sugar
  • 2 eggs large, room temperature
  • 1 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/3 cup crushed walnuts

Instructions

  • In a bowl, combine the chopped dates, boiling water, baking soda and coffee granules. Allow it to sit for half an hour.
  • Preheat oven to 180 degrees. Grease and flour a bundt pan or a loaf pan.
  • In a mixing bowl, beat the butter and sugar till nice and fluffy.
  • Add the eggs and beat till combined.
  • Sift in the flour, baking powder and salt into the beaten mixture.
  • Add the walnuts and coat.
  • Now add the dates mixture on top and the vanilla extract and using a spatula, fold the mixture making sure to keep the batter moist and not overmix.
  • Pour into the prepared pan and bake for 45 minutes or till the skewer comes out clean.
  • Cool in the pan for five minutes before flipping onto a cooling rack. Allow to cool completely before slicing and enjoying.
