A simple delicious spaghetti tossed in freshly made pesto, chicken and olives…
Days seem to be flying in full force, so much that I am unable to keep a track of time. I didn’t realize the week passing and missed my date to do this post. It is not that days are busy, but time isn’t waiting for none. Alhamdulillah, maybe I should just be happy that I am busy and somehow not keeping a track of time. Last year, around this time, we were excited about travelling to the US. This year, there are no imminent travel plans. One side of me is a little low because of it, but considering last year, I travelled more than I would have usually, I must just calm myself down and look into some local plans to keep the girls and myself occupied.
When I posted the pesto recipe, I had posted about the other recipe I made apart from this sandwich. I started cooking spaghetti very recently at home and this was one of my recent experiments. Since the sandwich was a hit, somehow I was confident that this dish would also be, as long as there was some chicken thrown in for them. 😉 There are hardly any ingredients used in this recipe and is mildly spiced. That made it quite a hit with the girls, that they really loved it. The pesto adds a nice dimension. For the vegetable angle, I added in some sliced olives, which really complimented the whole dish. You can make it without the chicken as well, and it would reduce the cook time even further. Off to this super easy recipe…
Pesto Chicken Spaghetti
Ingredients
- 200 gm spaghetti
- 2 tbsp olive oil
- 250 gm boneless chicken cut into strips
- Salt and pepper to taste
- 1/3 cup pesto
- 1/3 cup olives
- 1/4 cup parmesan cheese
- 1 tsp dried parsley
Instructions
- Cook the spaghetti till el dente. Strain and set aside.
- In a large saucepan, heat olive oil. Add the chicken along with salt and pepper till almost done.
- Add the pesto and olives and toss well.
- Add the cooked spaghetti and some of the pasta water if needed and toss well to coat.
- Cook for five minutes. Switch off, add the parmesan and parsley and give a final toss.
- Serve warm!
