In a bowl, combine the chopped dates, boiling water, baking soda and coffee granules. Allow it to sit for half an hour.
Preheat oven to 180 degrees. Grease and flour a bundt pan or a loaf pan.
In a mixing bowl, beat the butter and sugar till nice and fluffy.
Add the eggs and beat till combined.
Sift in the flour, baking powder and salt into the beaten mixture.
Add the walnuts and coat.
Now add the dates mixture on top and the vanilla extract and using a spatula, fold the mixture making sure to keep the batter moist and not overmix.
Pour into the prepared pan and bake for 45 minutes or till the skewer comes out clean.
Cool in the pan for five minutes before flipping onto a cooling rack. Allow to cool completely before slicing and enjoying.
