Ever since I started doing my posts for the Bakeathon, I really wanted to do a book review as well. Like I mentioned, I have so many cookbooks that I have been accumulating over the years and I would really love to run my fingers through it. Hehe… and what better way than selecting a baking book during a month that is always known for a lot of baking.

 

While browsing through my books, I picked up a recent one that I had picked up during my visit to the US. It wasn’t from anywhere, but the “Five Below” store next to my sister’s house. I have figured out that books are cheaper back there, especially if you find them at discounted rates. That doesn’t mean that the book is bad in itself. I have found some amazing picks from discount stores, especially from Rasha’s bookmarked list. The book I picked up was called “Bake Up – Kids Cookbook” by Nicole Hendizadeh. Though the book specified it to be for kids, it surely wasn’t a book that was that simple…

The book has a total of 60 baking recipes that are divided into five layers that are basically beginner, intermediate and pro recipes. The book starts off with some basic requirements like how to read a recipe, what baking equipments and gadgets to own and how to bake safely. The information provided is very precise not just for kids, but also if you are a new baker. All the recipes comes with beautiful and colorful pictures and covers all basic recipes from brownies to cookies to breads to granola. That is what is I loved about this book. It touches on a lot of basic baking recipes that you won’t be needing another book of baking when you are starting.

 

Just like this recipe that I tried, I have also bookmakred the Apple Cinnamon Muffins, Caramelitas, Pretzels and Dark Chocolate Peppermint Cookies. The only drawback I found in this book is that sweet and savory bakes are mixed together, however it doesn’t make much of an issue, since there is a very good table of contents to browse and go the required page.

Since my theme for this month’s Bakeathon was fruits and nuts, I ended up selecting this recipe. I ordered a can of peaches to bake it but ended up baking it only over last weekend, due to time constraints. The recipe uses peaches, which is one of my favorite stone fruits to have, especially fresh. If you remember, I had baked this cobbler with the fruits we had bought from a farm. However this recipe uses canned peaches which are available all around the year.

 

Just like its name, instead of butter, it uses heavy cream as its fat base and hence gives the whole bakes a very interesting softness and a more pudding feel. The batter comes together quickly and bakes pretty quickly as well. The only difference I made in this recipe is to use yogurt instead of sour cream, since that is what I had in my pantry. I used half the recipe since that was enough for us. All in all, it was a very satisfactory bake. The recipe asked to serve with maple syrup, since the bake in itself is very mildly sweet, especially if you drain your peach completely off its syrup. My sister had got me a bottle of maple syrup, which I did drizzle a little and then serve with a little whipping cream which was left after using the rest in the bake. Hehe… Off to this recipe…

Peaches and Cream Bake

Ingredients

  • 10 gm melted butter
  • 3/4 cup heavy cream
  • 2 tbsp brown sugar
  • 1 egg
  • 1 tbsp yogurt or sour cream
  • 3/4 cup all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp ground ginger
  • A pinch of salt
  • 420 gm can of sliced peaches drained

Instructions

  • Preheat oven to 180 degrees. Grease a 5 inch small pan and set aside.
  • Whisk together the butter, heavy cream, brown sugar, egg and yogurt till homogeonous.
  • Now add all the remainding ingredients and fold in till all moist.
  • Spread on to the prepared pan and bake for 35 minutes.
  • Cool slightly and then serve warm with a side of choice.
