A delicious fruity cobbler with a chocolaty topping, to make it even more delectable…
I have been scheduling the previous posts, since my days have been literally crazy. We first had HD’s cousin and family from Salalah for a week and then immediately my parents and my sister arrived one after the other last Friday. When you have family around, the time you spend on yourself is absolutely very limited. That is how I feel with trying to schedule up mosts on the blog. I wanted to somehow finish baking for this month’s Bakeathon before they arrived but I still have one more post to bake and put in. I really don’t know when I will be able to do it. I hopefully will be able to scrape through… 🙂
It has been feeling like I am doing a mini UAE tour, which I haven’t been doing in a really long time. The lockdown and the Covid protocols have somehow made me a really lazy person. I haven’t been moving out much over the past year, apart from when I was travelling, so it is quite a break-my-inertia moment going on. However, I am enjoying my time and I am happy, Alhamdulillah…
Coming to today’s post, the inspiration comes heavily from the Netflix show “Nadia Bakes”. She had an episode dedicated to chocolate – of course, my favorite ingredient! – and the first recipe she had was a mixed berry cobbler with a chocolate top. I watched that episode on the flight home in October and since then I have been wanting to bake it. The current theme for this month’s Bakeathon made the perfect opportunity to bake it as soon as possible.
Usually, cobblers have a vanilla spiked pancake batter style topping – like this one that is the only cobbler on the blog – but with the addition of cocoa powder and some chocolate chip into the mix, this recipe turns an otherwise uninteresting cobbler into something delish. I used whatever fruits I had in my pantry to make the base, so that means you can do the same too. The batter comes out really quick, but is thick and hence you may feel it won’t be enough to cover the fruits. Just drop ice cream scoopful of batter all over and watch the magic happen as it bakes.
I couldn’t wait till it cooled. I scooped out a portion onto my plate, with some labneh and chocolate syrup and dug in. It was one of the best and guilt-free bake I have had in a really long time, so much that I ended up eating half of it myself. 😉 If you are wondering what combination is it with labneh, do try it… It is healthier than whipped cream or ice cream, yet the saltiness perfectly complements the mild sweetness of the dessert. Mixed Fruit Chocolate Cobbler
Ingredients
- 1 large banana sliced
- 2 pears chopped
- 125 gm blueberries
- 1/2 tbsp corn flour
- 1 tbsp sugar
- 1/4 cup chocolate chips
FOR TOPPING
- 60 gm butter melted
- 1 large egg
- 1/4 cup milk
- 1 tsp vanilla extract
- 3/4 cup all purpose flour
- 1 1/2 tbsp cocoa powder
- 1/2 tsp instant coffee
- 3/4 tsp baking powder
- 1/4 cup sugar
- A pinch of salt
Instructions
- Preheat oven to 180 degrees. Grease an 8 inch pan and set aside.
- Mix the fruits along with the corn flour and sugar and spread on the pan. Sprinkle the chocolate chips randomly.
- Whisk all the wet ingredients together.
- In another bowl, whisk all the dry ingredients. Pour the wet ingredients and fold. The batter will be really thick.
- Drop spoonfuls of the batter all over the fruits. It is not necessary to cover the top. As it bakes, it will spread.
- Bake for 30 minutes.
- Take out and allow to cool slightly. Enjoy it warm with cream and a drizzle of chocolate sauce or caramel sauce, or even ice cream.
