What this cake would give you is a filled up heart for sure! The only apple cake I have blogged about is this one, though I have baked with apples a couple of times after that. Though they tasted good, they were not considered worthy of blogging, so have delayed it till I do some little adjustments from my side, InShaAllah. The problem with me is that every time I am trying different recipes, I tend not to repeat them unless they have really pushed me to bake again. There are cakes that I have baked so many times but haven’t made it to the blog as well. Yeah, kind of happens… so coming back to this awesome apple cake, that I adapted from here… I would really rate this one as a must try, in fact I was the one who finished half the loaf because it was just too irresistible. The health quotient is increased by oats and the cinnamon adds an awesome punch to the apples, as it does always!

Ingredients

  • 3/4 cup wholewheat flour aatta
  • 1/4 cup all purpose flour
  • 1/4 cup oats flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon powder
  • 1 cup diced apples mixed with 1/2 tsp cinnamon powder
  • 1/8 cup oil
  • 1/3 cup sugar
  • 2 medium eggs at room temperature
  • 1 tsp vanilla essence
  • 1/4 cup milk
  • FOR TOPPING:
  • 50 gm butter
  • 1 tsp cinnamon powder
  • 4 tbsp sugar

Instructions

  • Preheat oven to 180 degrees. Grease and flour a small loaf pan and set aside.
  • Sift together the flours, baking powder, salt and cinnamon powder in a bowl and set aside.
  • Beat eggs along with sugar till light and fluffy. Slowly fold in the sifted flour mixture and the oats.
  • Add in the oil, milk and vanilla and mix well.
  • Finally fold in the apples.
  • Bake for 50 to 60 minutes till the skewer comes out clean. If the top gets darkened, cover loosely with aluminium foil after 45 minutes and bake further.
  • For the topping, melt the butter, mix in the sugar and cinnamon and rigorously stir till sugar dissolves. Pour over the warm cake.
  • Allow to cool the cake in the pan. Slice with a knife and push out. Serve with a cup of hot tea or coffee!
