Pesto Chicken Spaghetti

Ingredients

  • 200 gm spaghetti
  • 2 tbsp olive oil
  • 250 gm boneless chicken cut into strips
  • Salt and pepper to taste
  • 1/3 cup pesto
  • 1/3 cup olives
  • 1/4 cup parmesan cheese
  • 1 tsp dried parsley

Instructions

  • Cook the spaghetti till el dente. Strain and set aside.
  • In a large saucepan, heat olive oil. Add the chicken along with salt and pepper till almost done.
  • Add the pesto and olives and toss well.
  • Add the cooked spaghetti and some of the pasta water if needed and toss well to coat.
  • Cook for five minutes. Switch off, add the parmesan and parsley and give a final toss.
  • Serve warm!

Notes

This dish is not spicy. Add crushed pepper or chilli flakes if required.
