We have been eating from out like mad. During these holidays, since we would hit the road early and come back really late, we hardly cooked anything much apart from the biriyani. My sister is already asking me to make her some special since I haven’t made anything much, hehe… I mean, that is true… there is hardly any time to be making specials especially when time is so limited. I am hoping to make at least something before it gets too late, InShaAllah… One request that has come is for this mango cheesecake, which I must get doing soon…
From all the eating, at times we do crave for very subtle meals. This pasta salad is one of them. Last year, we had a small blogger’s meet-up, in which Asiyakka had come with a salad similar to this. It was so delicious that we wiped up the bowl – literally! After that, I have made this several times when I am really not in a mood to make anything heavy. Akka used Cajun spice mix to pep up the salad, but I just used a dash of whatever I can find in my pantry. You can do that too – just spice it up as per your preference. The peanuts are the highlight in this salad – the crunch that it gives is really amazing. Off to the recipe…
- 2 cups macaroni, cooked till el dente
- ¾ cup sweet corn, boiled
- ¾ cup green peas, boiled
- 1 capsicum, chopped
- 1 tomato, chopped
- ½ cup roasted peanuts
- ½ tsp chilli flakes
- ½ tsp oregano
- 2 tbsp olive oil
- Salt and pepper to taste
- Combine all ingredients into a large bowl and toss till well combined.
- Keep in the fridge for around 15 minutes for flavors to settle.
