I was just counting and just realised that 8 days of my leave is already over!!! Boohoo… there’s still loads left to do and I really don’t know how to schedule things, but I guess I should just move with the flow. The weekend has been hectic but fun, had some good family time and a lot of travelling…. It’s always that good days seem to fly faster, so I guess I should just be content with the way days are moving… 🙂
I guess after an overdose of sweet stuff on my blog, which is happening after a long time, I should be giving a breather to this space!!! So thought of posting a vegetarian recipe. Just like I say, all the time, cooking vegetables is always a big challenge in my home. Even I have a tough time deciding what to cook when I am not in a mood for cooking chicken or anything non-veg. This curry was very well accepted by the men and wipped up with some chapathis. Not only that, it was quite quick to be made. Off to the recipe…
Bhindi/ Ladysfinger Kurma
Servings 4
Ingredients
- 450 gm lady's finger cut into 1 cm peices
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 large onion thinly sliced
- 1/2 tsp turmeric
- 1 cup curd
- 1 cup water
- 1 tsp chilli flakes
- 1/2 tsp garam masala
- For grinding:
- 3/4 cup coconut
- 3 green chillies
- 1 tsp ginger paste
- 3 shallots chopped
- 1 tsp garlic paste
Instructions
- Wash the lady's finger and pat dry. Cut into 1 cm peices.
- Heat a large frying pan and pour 1 tbsp oil. Fry the lady's finger in it till it becomes crisp.
- Grind the "for grinding" ingredients to a smooth paste and set aside.
- Meanwhile, heat your saucepan, add the remaining oil. Once it heats, splutter the mustard seeds.
- Add the onion and saute till light brown.
- Add the fried lady's finger and give it a nice stir. Add the turmeric powder and saute till raw smell goes.
- Add in the curd, ground masala and water and cook on simmer for around 5 minutes.
- Finally sprinkle the red chilli flakes and the garam masala, and adjust salt.
- Serve warm with rotis or rice!!!
Would love to try out this tempting kurma. My other half is a big fan of ladysfinger/okra. Let me keep the recipe aside for next weekend.
