Can you believe that just like that, Ramadan is half way? It has been an extremely fast Ramadan, like it has been for the past few years. This Ramadan has been different in many ways, thanks to the Covid 19 pandemic, but Alhamdulillah we have all accepted graciously. Working more at home than at office is one of the biggest advantage. Driving in Ramadan is not something I enjoy, especially when you have a lot of cranky drivers on the road! At least, this year, thanks to the shutdown, traffic is so much better and hence, less stressful. I am just looking forward to seeing how the rest of the Ramadan pans out, InShaAllah…
The girls started loving mojitos once we had it at Hiba’s house during one of her cooking classes. They have been eating my head each time to make one at home. HD isn’t a big fan of sodas so I was trying not to make any. But this time, I gave in. We had berry mojita at Hiba’s place, which was amazing. I hadn’t got any berries nor could I pick up any frozen berries. I chose to make with whatever I had at home, and isn’t that the essence of the current situation? The orange and lemon are juiced and strained, before adding the soda and some muddled mint and sugar. It was totally refreshing. We had it during Iftar, but the girls mopped off the leftovers before the end of the day. Do try this if you are in a mood for some healthy soda… 🙂
Orange Lemon Mojito
Ingredients
- 1 orange
- 1 lemon
- 3-4 tbsp sugar
- A pinch of salt
- 6-10 mint leaves
- 330 ml soda
- 1 cup water
Instructions
- Muddle the mint leaves with little sugar. Add 1/4 cup water, pour into an ice cube tray and freeze.
- Peel the orange and lemon. Add sugar and rest of the water. Blitz till smooth.
- Pour into a jug. Add the mint ice cubes. Top with the cold soda and salt. Give a good mix. Enjoy.
