March has been so hectic and overwhelming, to say the least. The Covid 19 pandemic has spread such havoc that it has disturbed all lives from the rich to the poor, turning everything upside down. I don’t think I need to mention how the overall mood is at the moment. As much as our normal daily schedules have been hit, things aren’t looking good anyway. The overall economy movements are going to affect everybody’s personal finances and that doesn’t spare us either. But we are just trying to keep calm and hope that everything will pass, just like all our previous tests from the Almighty has gone off. Maybe, it is a reminder from the above that there is some force that is beyond our imagination, and all of a sudden, human beings are feeling helpless. I only pray that this test passes away as soon as possible, and brings back all normalcy into our lives… Aameen…
It makes me wonder, how many of us were really bored of our “normal routine” lives and at this moment, everybody is craving for it to come back – be it the kids, who want to go back to school; the mothers, who would like that little lone time without anybody in the house to calm themselves up; the fathers, who are worried if this prolonged work-at-home situation may affect their ability to support the family well, so on and so forth. However, many of us are taking this opportunity to make memories – to cuddle up to binge watch series, play board games or card games like Uno, cook and bake together, do house chores together, get together and recite the daily scriptures, do some activities together… I guess rarely we get such opportunities in the mad life of ours, and this is the best time to slow down and breathe in this time… 🙂
While running through this month, the majority of the posts have been challenge related. This is the last post for the month, which is for the Shh Cooking Challenge. I mentioned in the last month’s post that we are moving from cooking per state to themes every month. This month’s theme is pancakes and was suggested by Archana. My partner for this month is Renu, who blogs at Cook with Renu. I am being paired with her for the first time for this challenge and it was lovely coordinating with her for this challenge. She gave me two very easy ingredients, banana or apple and cinnamon. I chose the apple and went ahead with making these healthy, filling pancakes for a weekend breakfast.
I had two green apples in my fridge, that has been there forever. I sometimes wonder how do they stay without getting spoiled. Hmm… I grabbed this opportunity to rescue them out of their hibernation. Hehe… These pancakes are super simple – the usual pancake mixture but I replaced some of the floor with oats to make it a bit healthier. I used a mix of eggs and yogurt to give its fluffiness. I still used the butter, because c’mon, butter makes everything so much better. 🙂 I ate it up just like that, I loved its mild sweetness. The folks had them with a drizzle of honey and B enjoyed them with cream whisked in with honey. We realized it much later that the cream and pancake combination was heavenly and regretted not having tried it earlier. Oats Apple Cinnamon Pancakes
Ingredients
- 2 green apples peeled and grated
- 1/2 tsp cinnamon
- 1/4 cup brown sugar
- 50 gm butter
- 2 large eggs
- 1/2 cup yogurt
- 1 cup rolled oats powdered
- 1/2 cup wholewheat flour
- 1/2 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- Milk or water as needed
- Butter for cooking
Instructions
- Mix the apple, cinnamon and sugar and set aside.
- Melt the butter. Whisk in the eggs and yogurt.
- Whisk the dry ingredients together in a bowl and add onto the wet ingredients. Add the grated apple and fold.
- Add water or milk, whatever using, till you have the desired consistency.
- Heat a pan, melt butter. Pour 1/4 cup each and cook till both sides are done. Serve warm with honey or cream.
