All of a sudden, my posts refuse to cooperate with my blog name. After the Banana Caramel Muffins, there has been a line of savory posts before this simple cake appears on the blog. You may see the same trend continuing this whole month. Sometimes, I feel a comment from my sister sometime ago hits me hard, “You don’t have any serious recipes!” I still don’t get what she meant by “serious” recipes. Maybe she means hard core dinner or lunch recipes. 😀 Yes, I have to admit, I have a long list of basics to cover. But I do have sufficiently interesting and easy curry recipes, or even rice recipes. Or no? I don’t know… hehe… It is best to say that I have been cooking closer to what my family needs and hence the off balance in the posts. 🙂 After taking my food seriously, the baking and sweets have become limited to once in a week. However, hopefully in the month of December, you will see some interesting baking recipes, with mostly being sweet, so stay tuned… 😉
Meanwhile, let me hover over this delicious buttery mango cake that I baked sometime back. Agree, it isn’t mango season, but there are some Australian mangoes in the market these days. They may be pricey but they are oh-so-delicious! I do pick one for testing purpose and distribute it like gold among the folks at home. Hehe… Anyway, coming back to this cake, the recipe is quite simple. But instead of using mango puree, I added in diced mango slices into this cake, so you get those yummy mango bites in between. I would have thrown in some broken cashew-nuts as well, but realized I had run out of them. I have spiced this cake with cardamom. The pairing of mango and cardamom can never go wrong! Feel free to substitute with a dash of vanilla if you are not a cardamom fan. Off to this simple recipe… And yes, if you do love mango bakes – who doesn’t? – you would surely love this mango semolina cake, which is delicious!
Mango Cardamom Butter Cake
Ingredients
- 100 gm butter
- 1/2 cup sugar
- 1 large egg room temperature
- 150 gm all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup milk
- 3/4 cup chopped mango
- 1/4 tsp cardamom powder
Instructions
- Preheat oven to 180 degrees. Grease a small loaf pan well.
- Beat the butter and sugar till fluffy. Add the egg and beat till incorporated.
- Sift the flour, baking powder and baking soda into the butter mixture. Add the milk and fold in the mixture.
- Fold in the mango slices and cardamom till done.
- Pour into the prepared pan and bake for 30 minutes or till done.
The cake must be really tasty with those mango bites..Looks delicious!

I think will have to buy the high priced mangoes now after seeing this recipe here,yummmy.. good twist to the good old fashioned butter cake. I love mangoes in bakes and so am sure I will love it, will give a try once its season. I fear the carbide in them than the rates when its in market off season.
