This year, I have decided to put less pressure on myself as far as blogging is concerned. Even though I still have loads in my drafts to complete, I am going to take it light. I have been wanting to do so since last year but it hasn’t happened. But this year, I am really going to concentrate on one post at a time and make it easy for me, so that I don’t loose the charm of blogging and can sustain my interest as much as I can. Let’s wait and watch out… 🙂
I am starting off with the Blogging Marathon #84 and the theme I chose was “New Year Challenges”. I am not a person who makes resolutions nor do I lecture anybody to do it too! If you are resolved at doing something, it is not necessary it needs to start with the new year, it can start anytime of the year! But I still took the theme since it gives me a little push to actually think of it. I have started my journey to weight loss and clean eating end of April last year, but if you ask me how it has been so far, it has been OK. I haven’t been able to totally get off the wrong types of food from my diet but a little bit of resolve has definitely come in. I am sincerely hoping that I will be able to straighten myself up and fasten the pace a little bit! Hehe… So for the NYC, I decided to choose three healthy overnight breakfasts. We don’t need to mention how important a complete breakfast is for the whole day ahead. When I am not having boiled eggs, I just mix up something that can be done overnight, dumped into the fridge, and then just pushed into my bag in the morning, as I start my run to the office.
The first one I am sharing is Chocolate Chia Pudding, which is vegan. Chocolate is love for me so I would rate this as my favorite chia pudding. There is nothing fancy in this recipe… only thing I do is to cook the cocoa powder to remove the raw taste, and then go on to soak the chia overnight, so that I have a pick-and-go breakfast ready in the morning. Chia actually makes me a bit queasy so I have it for breakfast when I really feel like I want to have it. Love chia puddings? Chocolate Chia Pudding
Ingredients
- 1 cup almond milk
- 1 tbsp cocoa powder
- 1 tbsp brown sugar
- 1 tsp vanilla extract
- 1/4 cup chia seeds
- Berries to top
Instructions
- Whisk the cocoa powder into the almond milk and bring the mixture to heat. Do not boil, just simmer and cook till the cocoa powder is fully dissolved. This is just to avoid the raw taste of cocoa powder.
- Switch off and add the sugar and vanilla extract. Allow it to cool.
- Put the chia seeds into a container and pour the cooled cocoa milk on top of it. Give it a good whisk and keep overnight in the fridge for puffing up.
- Top with berries and serve for breakfast!

My thoughts too say Everyday is a new year ! One needs will power and then maintain it . I worked hard on clean eating for 8 months , but now taking a break ! This vegan dessert is pulling me back to good habits . It looks sinful and gorgeous .
