Chia Mango Pudding

Being a food blogger means getting excited while seeing new ingredients online. Just like I got excited about kale, I got excited about chia seeds as well. The whole net went blah-blah about how wonderful and nutritious this seed is. During a casual visit to Spinneys – a supermarket chain I go to only if I want to pick up some expensive “can’t find anywhere else” stuff that catch my fancy! (so that means I don’t frequent them much, fearing my wallet! 😉 ) – I was picking up a box of milled flax seed, when my eyes fell on the box of chia seeds right next to it. My heart bounced with happiness – yaay, I get to try it! I was so excited that I didn’t even check the price. With my prized found, I went to the counter for paying the cash and once the cashier punched in the price, my heart sank! So expensive? Really? 😮 A 350 gm box cost me Dhs. 36/-.  It must be expensive since it is an import product and bought in minimal quantities. Nonetheless, it is a prized possession now and I make it when I really want to have something exotic! Hehe…

 

This is just one recipe that I have tried with it, after seeing a lot of beautiful pictures on Pinterest. My pictures do no justice since I had no patience to grab my camera and got my Iphone to click them. I just couldn’t wait to reach office to dig into them and I must tell you, one of the best breakfasts I have had! The mango was just like a crown on its head, added additional flavor to the dessert! Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 1 tbsp raw sugar
  • 1/2 mango chopped

Instructions

  • Combine the chia, coconut milk and sugar in a jar and give it a nice whisk.
  • Keep it overnight in the fridge or till the chia is swelled up.
  • Bring out, top with the chopped mangoes and enjoy!

  1. Even I am looking out for chia seeds! 🙂 I hope I get lucky in Yanbu.. coz vanila essence is not to be seen yet! I picked it from Khobar. So it is Mango season already?

      There are mangoes on and off. I have used Kenyan mangoes here, last week, I found Australian ones in the market but too expensive… 🙂

  2. Chia seeds I also read about the raving. Have never bought but have tried and not too bad nice. This pudding – lovely and simple to put together. Just wondering if I can make with basil seeds? That have stock in the fridge.

  8. Chia seed is really expensive. I bought a bottle and everytime I just use 1-2 tsp, haha!
