I love sweet breakfast. If I could, I would have done it most of the days but that is not what my family demands, and hence I try to stay away from it. Not only that, most of it end up going into my tummy, which is the last thing I want to happen. Hehe… The beauty of having something like a muffin or overnight oats is that it can be made the night before, and then there is not much work to be done in the morning. All you need is a cup of black coffee and you are sorted. This muffin I am sharing today is also that way. This is my second post for this month’s Bakeathon.

 

I came across this muffin from a friend’s Instagram page. She mentioned that she made these muffins and froze them so that she always had some treats in the fridge for her girls. What a wonderful thing to do! The beauty of these muffins are that it mixes the best of three amazing fruits/ vegetables that can be used in baking – apple, banana and carrots. I love bakes with all three and so when all three get featured in one muffin, I had to try. The recipe is a very simple recipe, though I have tried to make it healthier by substituting one portion of the flour with whole wheat flour and oats. The moistness in the muffin comes from the fruits added and hence there is very limited use of fat. It is a very toddler friendly recipe, however if you would like some crunch and indulgence, then do go ahead and add some chocolate chip cookies or nuts. Off to this simple recipe…

ABC Muffins | Apple Banana Carrot Breakfast Muffins

Ingredients

  • 1 large apple peeled and grated/ chopped
  • 1 meduim ripe banana mashed (roughtly 125 gm)
  • 1 large carrot peeled and grated
  • 1/2 cup all purpose flour
  • 1/2 cup wholewheat flour
  • 1/4 cup oats flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon powder optional
  • 1/4 cup brown sugar
  • 1/4 cup melted butter or oil I used butter
  • 1/4 cup milk
  • 1 large egg room temperature

Instructions

  • Preheat oven to 180 degrees. Keep a 12 pan muffin pan lined and ready.
  • In a mixing bowl, sift together ingredients from all purpose flour to salt.
  • In another bowl, beat the egg and sugar till nicely whipped and doubled. Now add the grated and mashed fruits, oil, milk, vanilla and cinnamon if using and whisk to mix well.
  • Now add into the dry ingredients and fold the mixture till the whole batter is moist. Do not overmix.
  • Add equally into each of the holes and bake for 20-25 minutes or till skewer comes out clean.
  • Take out from the tin and cool on a rack. Enjoy warm or cooled with coffee...

Notes

If you want more crunch, you can add 1/4 cup of nuts of choice, like walnuts or even chocolate chips to the batter.
