Ingredients
1largeapplepeeled and grated/ chopped
1meduimripe bananamashed (roughtly 125 gm)
1largecarrotpeeled and grated
1/2cup all purpose flour
1/2cupwholewheat flour
1/4cup oats flour
1tspbaking powder
1/2tspbaking soda
1/4tspsalt
1tsp vanilla extract
1/4tspcinnamon powderoptional
1/4cupbrown sugar
1/4cup melted butter or oilI used butter
1/4cupmilk
1largeeggroom temperature
Instructions
Preheat oven to 180 degrees. Keep a 12 pan muffin pan lined and ready.
In a mixing bowl, sift together ingredients from all purpose flour to salt.
In another bowl, beat the egg and sugar till nicely whipped and doubled. Now add the grated and mashed fruits, oil, milk, vanilla and cinnamon if using and whisk to mix well.
Now add into the dry ingredients and fold the mixture till the whole batter is moist. Do not overmix.
Add equally into each of the holes and bake for 20-25 minutes or till skewer comes out clean.
Take out from the tin and cool on a rack. Enjoy warm or cooled with coffee...
Notes
If you want more crunch, you can add 1/4 cup of nuts of choice, like walnuts or even chocolate chips to the batter.
