Wholewheat Flax Pancakes

Very rarely, my kids demand they want something. So you can imagine how much I was in for a surprise when the girls asked for pancakes for their tiffin to school one day. They never liked pancakes, so I was surprised when they asked me for it! Quickly I made some with wholewheat flour (aatta) and enriched them with some flax seeds. One thing I love about adding flax seeds to anything baked is the softness that it imparts. It makes the whole bake super soft, just like these brownies. You can very well skip the egg and substitute it with 1/4 cup yogurt to make it eggless. If you are looking for a super quick and healthy breakfast option, then look no further! Drizzle up some honey and have it, or it tastes good as is!

Wholewheat Flax Pancakes

Ingredients

  • 1 large egg
  • 1 cup milk
  • 1/3 cup oil
  • 1 cup wholewheat flour aatta
  • 1 tbsp milled flaxseed
  • 2 tbsp brown sugar
  • A pinch of salt
  • 1 tsp baking powder

Instructions

  • Whisk the egg, milk and oil till well combined.
  • Add in the remaining ingredients and whisk till just combined.
  • Prepare pancakes by spreading butter. Makes 5.
  • Serve hot!

Hmmm,… been long since I made pancakes.. well if it was considered as a meal I would be glad to make often.. when i make this.. it is just treated as a starter to the meal! 😛 Atta version looks good.. I tried once with aata but I still prefer the plain flour with buttermilk or egg.. The photography is nice with a dark background… 🙂

  4. I love pancakes…addition of flaxseed sounds cool…I am yet to work with flaxseeds..i ought to try them…I didn’t know yogurt could be used as an alternative to eggs…I could make some pancakes for my sons next playdate so that all get to enjoy it

  5. From you, I got the idea of adding flax seeds to baking.Starting yesterday, I made the dinner rolls with ground flax seed( I ground the flax seed in an Indian mixer with water until its coagulated). My pav buns were perfect as store-bought ones.These pancakes are perfect with some flax seed.
