Remember the Secret Recipe Club? I was able to participate only in very limited challenges before the club called it a day. It was a pretty saddening time for almost all participants of this amazing club, since it was a really interesting challenge and everybody who participated in it enjoyed it to the maximum. When Sarah declared on the group FB page that she would be conducting a Reunion Reveal Day for this challenge, I had to jump in, even though I wasn’t sure how I would manage the challenge in between my hectic schedule. However, knowing me, I know I wouldn’t rest till I finish the challenge off. Hehe…
So finally the email arrived, I was assigned Amy’s Cooking Adventures. She and I were in different groups during the SRC times so I never got her blog. As soon as the email came, I jumped onto her blog and looked around. Initially, I wanted to make a pie. I don’t know why, but I just wanted to, hehe. So I kept checking out some of her pies and even bookmarked the Caramel Apple Pie. But I wasn’t sure if my girls would eat them, so I with a heavy heart, dropped that plan – but only for the time being!
I then thought of these cookies, and later of this corn salad, before finally settling up for these waffles. My cousin had decided not to come over home on a Friday, and HD had work that day, so he left before I woke up. It gave me the perfect fodder to be making these waffles for the girls. They are not big fans of waffles nor pancakes but they do like it when I make it once in a while for them.
Within 30 minutes, the waffles were ready. The best thing about waffles is that you don’t need to keep a watch on them unlike pancakes. You just pour the batter, and just come checking after some time if the light has gone off. Hehe… The girls enjoyed them with a sprinkling of honey. I was so glad that the 8 I had made was totally finished off by them. These waffles are so easy to make, that they are surely going to be a repeat for the lazy weekend breakfasts or even their school snack box.

Notes

I love waffles and the idea of not having to stand over them with spatula in hand sounds like 10/10!

Yum, love waffles! Such a great pick for the SRC reunion. I use that vinegar trick occasionally too when I don’t have buttermilk on hand.

Please don’t be sorry, we are all locked of time! Thank you so much for coming by and commenting Dorothy…
We do waffles or pancakes multiple times a month and I always look for buttermilk whole wheat recipes. (I’d have to quadruple that recipe though!)
Thank you so much Lauren…
