Persimmon Pistachio Lassi

My favorite fruit is back in season! But I always wonder why I have so much difficulty finding it in the markets here. 🙁 Usually HD’s staff goes to the main fruit and vegetable market to get stuff but despite explaining it to them, they were not able to trace this fruit. A couple of weeks back, I found it in one hypermarket which is quite far away from home. I had to go there for checking something, but didn’t find it, but that disappointment was offset when I found a big box of persimmons staring at me while simply loitering in the supermarket. Hehe… I must admit that I ate almost the whole box all by myself. HD must have eaten just one and B didn’t even bother to eat it, even though he likes this fruit. Two got pulsed into this delicious lassi as well. All you need to ensure is that the persimmons are super ripe, otherwise they are no good! I wash them really well and apart from the top portion, eat up the entire fruit including its skin! But only if it is nicely ripe and pulpy, otherwise it has a tendency to leave a very bad after effect in your mouth which is not very appealing. 😕

 

I must say that the idea for a persimmon lassi came from here. I added pistachios for a nutty flavor and it was an amazing lassi to wash down a heavy lunch I had that day. I don’t know when I can get another box of persimmons, but I guess I have to go to that same hypermarket during the weekend, to see if I can get myself one more box before it totally disappears. 🙂 Before moving off to the recipe, sharing the previous persimmon recipe I have on the blog…

Persimmon Pistachio Lassi

Ingredients

  • 2 persimmons pulp taken
  • 2 tbsp shelled pistachios
  • 1/2 cup yogurt
  • 1/2 cup cold water
  • 1/2 tsp cardamom powder
  • 1 tbsp rosewater
  • 1 tsp sugar

Instructions

  • Combine all ingredients into a blender and blitz till smooth.
  • Pour into a tall glass and serve immediately.

  2. Wow! I have seen these but never tried them. But like you said it is not there always and nor in abundance. I am most definitely going to try this when I see it next time. Cannot avoid after reading your love for it and the extent you went for it! LOL

    We love this fruit so much and every time its in season, my husband bring a big box full of these super yummy fruit. I never even thought of making persimmon lassi until I saw your post. Love your recipe. Can’t wait to try it out !

    Persimmons were hard to find this year here too. Not sure why. I make cookies & bread out of them but I’ve never tried them in a lassi. Great idea!
