I sometimes really feel that I am addicted to my blog. Seriously… Today was a hectic day, in fact the hectic schedule started from the time I landed from office to home yesterday. Since we are having a public holiday for Muharram (Islamic New Year), we had called some guests today and I was pretty excited since I was having a big crowd coming in for lunch after almost five months. Each time we call a crowd, I am a nervous wreck. I plan and plan and plan… and even in my sleep, I am only thinking about the food that is to be cooked. I had posted on the blog’s FB page on how many would be keen to have some tips on organizing a small lunch or dinner and I have received some positive responses. InShaAllah, will be working on that post soon… The lunch is done and Alhamdulillah, I am relieved that the food was loved – isn’t that our biggest anxiety? – and I have managed to pack up the leftovers, so at least I am happy that there is nothing much in the fridge to get cleared up, still I am having enough to keep my kitchen closed for the next two days, while I enjoy a relaxed weekend, InShaAllah…
Even though I would have loved to go off to sleep, since the last night was quite disturbed, I am sitting and doing what I love doing a lot – sorting out my food pictures from the camera. Though I am really concerned about how much I have to clear up as far as drafts are concerned, I am not thinking about it too much. So while I sit and go through them, I am leaving you with this delicious yet simple salad, which is loaded with proteins. Nowadays, I am having carb-free dinners as the below and I am feeding the folks at home the same. To my surprise, they are all taking it positively. This is one of them that I keep repeating at least two times a week. Life is made much easier by the canned beans available, but I still try my level best not to forget to soak them before leaving to office in the morning. Off to this really easy salad…

healthy one..I too do this sometimes for a evening snack as am otherwise bad at taking salads,I add a dash of lemon juice too 🙂
