A super simple yet delicious Mango Muffins, studded with chocolate chips and eggless!
It has been difficult for me trying to add content on the blog, though I have been free most of the time, to actually be true. I have been mostly home, helping umma out with little things and just being in and out of the house. The girls have been attending to their exams and madrassa classes from my eleema’s – umma’s sister – home right in front of ours, since the wifi is there. We have started our yearly round of doctor visits too – dental, eye, etc. as would be the case of many expatriate families when they come home on vacation. The difference in the service and the amount paid in comparison is so huge, that I am sure that everyone prays nothing happens while you are in your respective Gulf area. Correct me if I am wrong… Hehe…
Otherwise, it has been hot on and off, sometimes really uncomfortable too. The last time I came during this time was when Azza was a 35 day old infant and I don’t even remember how hot it was during that time. But a lot has changed climate wise over these years, and it is predicted that this year would be one of the hotest in Kerala. Sometimes the breeze is very comforting, but that is a rare occurence. Sleeping with an A/C on is not a viable option all the time. Somehow, the cold tends to tighten my calf muscles. 😕 Maybe I am seriously growing old…
Since it is slowly starting to become mango season, I thought I would share this recipe, that I have been reserving for this season. As per umma, this time the mango crop seems to be bad. There was an unexpected heavy rain during the end of February, which has caused many of the flowers to fall off and even burn off. I am just hoping that I will be able to enjoy a few mangoes before I leave and carry some along with me too… There are some mango recipes already on the blog if you search, but some of my favorites have to be this Mango Mousse Cake, one of our recent favorites – the Mango Fool and this Mango Marble Cake, I wish to repeat as soon as I get back to my UAE abode, InShaAllah…
One best thing about UAE is that you get mangoes all around the year, depending upon which country is having its season during that time. Accordingly, the price fluctuates too. There are times when we get African mangoes and they are incredibly huge and sweet as well. I made these muffins with those mangoes, when my girls complained that I wasn’t baking as much as I used to. Somehow cooking has gone to bare essentials of late, but when the mood hits, I still try to bake or cook something out of my comfort zone. These mango muffins are eggless, and baked with whole wheat completely. It is sweetened with condensed milk and the chocolate chip adds to its oomph. You can very well do away with the chocolate chips and add chopped nuts instead, but then anything with chocolate is always good, isn’t it?
Mango Chocolate Chip Muffins | Eggless Mango Muffins
Ingredients
- 3/4 cup mango puree I used fresh
- 1 can condensed milk (400 ml)
- 1/2 cup oil
- 1 tsp vanilla extract refer notes
- 1 cup wholewheat flour (aatta)
- 1/2 cup all purpose flour
- 1 tbsp corn flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips, tossed in a tbsp of flour refer notes
Instructions
- Preheat oven to 180 degrees. Line a 12 hole muffin pan with liners and set aside.
- In a pitchers, whisk together the puree, condensed milk, oil and vanilla till homogenous.
- In a mixing bowl, sift all the dry ingredients (flours to salt). Pour the wet ingredients and fold using a spatula, mixing till all moist.
- Add the chocolate chips and fold once. Divide equally into the muffin tins and bake for 25-30 minutes till skewer inserted comes out clean.
- Take off from pan and cool on rack. Serve with a cup of your favorite beverage.
