“Oh you who believe! Fasting is prescribed to you as it was prescribed to those before you, that you many learn piety and righteousness” (Surah Al Baqarah:183)
Ramadan is on us, Alhamdulillah… InShaAllah, with the sunset today, it will start – the time when every aspect of our life is looked into and disciplined… Actually, I always feel that we limit our good deeds and discipline only to these 29 or 30 days. It is said that it takes 21 days to create a habit, so in case we sincerely want to create a good sustainable habit in ourselves, this one month should help us with it. After all, there is even a Hadith in this regard:
Abu Huraira reported: The Messenger of Allah, peace and blessings be upon him, said, “Take up good deeds only as much as you are able, for the best deeds are those done regularly even if they are few.” Source: Sunan Ibn Mājah 4240
The thrust is on the quality, not on the quantity. There were a few habits of mine that I have left aside, intentionally and/or unintentionally, which I am trying to start during this month, one at a time, InShaAllah, and of course, push myself to continue with it.
I was not thinking of doing the Fantastical Food Fight this month, since I wasn’t sure if I would be able to participate. But when Sarah’s email arrived, the theme showed “Salads” and instantly, I knew there were a few in my drafts that I could pull out. My eyes suddenly fell on this awesome Chicken Caesar Salad that I had clicked sometime ago, but kept appearing on our dinner table since HD loved it so much.
On the contrary belief that this salad is named after the famous emperor Julius Caesar, this salad is named after it’s creator, Caesar Cardini, an Italian-American who had a restaurant in Mexico during the 1920s. History says that he discovered this salad while trying to create one with his depleting supplies. Indeed, necessity is a mother of invention! Originally this salad was served with eggs, which got replaced by chicken.
Whatever said and done, it is a very filling salad. Wouldn’t you agree? Lots of lettuce, topped with shredded chicken, croutons, some dressing and loads of Parmesan cheese! I grilled the chicken and used brown bread to make the croutons. I replaced some of the mayonnaise in the dressing with yogurt, but you wouldn’t really make it out. The dressing was so good that you could lick the spoon and the bowl clean. 😀 It is really filling and easy to make, that all you need is a soup to go by its side. Off to the recipe…
Healthy Chicken Caesar Salad
Ingredients
- 500 gm romaine lettuce
- 2 chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 4 brown bread slices cubed
- Grated parmesan cheeses as required
- FOR SAUCE:
- 2 tbsp mayonnaise
- 1 tbsp yogurt
- 1 tsp mustard sauce
- 1/2 tsp dried parsley
- Juice of 1/2 lemon
- Salt and pepper to taste
Instructions
- Slice up the lettuce thinly, discarding the thick portions. Set aside.
- Rub salt and pepper on the chicken breasts.
- Heat olive oil in a grill pan. Cook both the sides of the chicken till well done. Drain and set aside.
- In the same pan, toss the bread cubes and shallow fry till crisp. This will be the croutons.
- Chop the chicken into thin slices.
- For the sauce, whisk all ingredients till smooth.
- Divide up the lettuce into four salad bowls
- Top with equal quantities of chicken and croutons. Drizzle up the sauce and sprinkle parmesan as required.
- Dig in!

I’m glad you were able to join in this month! I’m sure a salad isn’t really the best meal during Ramadan since it’s so light. I pulled out a salad from my drafts since the US has had a romaine recall (which breaks my heart!). Your Caesar looks absolutely beautiful. I didn’t know the history behind it at all, even though it’s my favorite kind of salad! Gotta love learning something new like that unexpectedly 🙂
