Ingredients
500
gm romaine lettuce
2
chicken breasts
Salt and pepper to taste
2
tbsp
olive oil
4
brown bread slices
cubed
Grated parmesan cheeses
as required
FOR SAUCE:
2
tbsp
mayonnaise
1
tbsp
yogurt
1
tsp
mustard sauce
1/2
tsp
dried parsley
Juice of 1/2 lemon
Salt and pepper to taste
Instructions
Slice up the lettuce thinly, discarding the thick portions. Set aside.
Rub salt and pepper on the chicken breasts.
Heat olive oil in a grill pan. Cook both the sides of the chicken till well done. Drain and set aside.
In the same pan, toss the bread cubes and shallow fry till crisp. This will be the croutons.
Chop the chicken into thin slices.
For the sauce, whisk all ingredients till smooth.
Divide up the lettuce into four salad bowls
Top with equal quantities of chicken and croutons. Drizzle up the sauce and sprinkle parmesan as required.
Dig in!
Notes
You could alternatively bake the chicken and bread in the oven too.
