Healthy Chicken Caesar Salad

Ingredients

  • 500 gm romaine lettuce
  • 2 chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 brown bread slices cubed
  • Grated parmesan cheeses as required
  • FOR SAUCE:
  • 2 tbsp mayonnaise
  • 1 tbsp yogurt
  • 1 tsp mustard sauce
  • 1/2 tsp dried parsley
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  • Slice up the lettuce thinly, discarding the thick portions. Set aside.
  • Rub salt and pepper on the chicken breasts.
  • Heat olive oil in a grill pan. Cook both the sides of the chicken till well done. Drain and set aside.
  • In the same pan, toss the bread cubes and shallow fry till crisp. This will be the croutons.
  • Chop the chicken into thin slices.
  • For the sauce, whisk all ingredients till smooth.
  • Divide up the lettuce into four salad bowls
  • Top with equal quantities of chicken and croutons. Drizzle up the sauce and sprinkle parmesan as required.
  • Dig in!

Notes

You could alternatively bake the chicken and bread in the oven too.
