Hope all of you had a great start to the year. Alhamdulillah, I had the chance to meet my fellow blogger from Kuwait, Sona in person! It was a really short meeting, considering that she had come for a week’s visit to UAE and had squeezed in some time in between to catch up. I have always loved reading her blog and feel sad that now she hardly finds time to maintain it, but I hope sincerely that she gets back to it soon! 2014 on the blog started with a guest post for her and exactly a year after, I meet her. What coincidence… It is always fun meeting fellow bloggers, feels like you have known them before… Apart from that, the other exciting thing that happened… Please don’t laugh, yeah! As the kids and me got ready and waited for HD to get out of the abode so that we could finally move out, I sat scanning through the channels on TV. We got our cable connection a month ago, and apart from kids watching cartoons and D watching news when he was around, I have hardly sat on it – blame it on the tight schedule. And guess what I found! “Food Food“!!! I could not contain my excitement… for the next one hour, I sat watching Vikas Khanna, Harpal Singh, Ajay Chopra, Sanjeev Kapoor and Shipra Khanna make their 2014 bests! Rasha was literally in a face-palm situation – she knows next time the TV is on, I may just switch to this channel! Hehe… now a book with lots of scribbled notes to refer to, just to add to the gazillion print outs and cookbooks adorning my shelf… HD is already shocked beyond words, not knowing what to say… 🙂

 

Jokes aside… let me share with you a very simple chai time snack. Chopped dates dunk into a flour paste and deep fried… is just an awesome combination with tea for any evening. This is one of umma’s quick fix snacks when she runs out of ideas. Dates is something we always have at home. D would want to bite in something sweet after lunch, so if we run short of peanut chikkis or sesame balls (kadala muttayi or ellunda, if we say in pure Malayalam!), he would munch on a couple of dates. After all, dates is super food, one of the most loved by the Prophet Muhammad (PBUH). When not eaten in this way or not blitzed to make a lassi, milkshake or almond smoothie, this is another way we enjoy it… Simple and easy…

Ingredients

  • 12 dates deseeded and chopped
  • 3/4 cup flour
  • A pinch baking soda
  • 1 tbsp sugar
  • A pinch of salt
  • Water as required
  • Oil for frying

Instructions

  • Combine all ingredients from dates to salt in a bowl. Add water slowly and mix well with your hand till you reach the correct consistency. The batter should be thick. If it becomes watery, adjust on the flour by adding more.
  • Heat oil enough to deep fry in a kadai.
  • When the oil is smoking hot, drop spoonfuls of the batter and cook on medium-low flame till golden brown. Do not fry in high heat otherwise the inner part wont be properly cooked.
  • Take out using slotted spoon and drain excess oil on kitchen towel.
  • Enjoy with a cup of tea!

  14. dates in fritters sounds interesting 😀 but the problem is my family would not like it, so I may experiment is sometime in later years haha but really nice idea or may be chopped dates would do?
