I would have never known of this simple yet delicious sandwich, had it not been the little food joint opposite to our office lane. Usually, I order food through our office boy. He knows what I like to eat, so he asks me and orders accordingly. One day, he suggested me to try the “Bombay Masala Toast” from this outlet and I didn’t know what to expect. I went by as he suggested. I didn’t find the sandwich so intriguing but as per my colleague P, it is one of the most sought-out street food in Mumbai. I was surprised to know that and then slowly got to knowing about the sandwich more.
The next time I ate it, I carefully dug into it seeing what each layer had in between it. One very important factor of this sandwich is the butter used. It always has to be Amul, nothing else! When I am in a mood to make this at home, I buy a little pack of Amul butter so that I can spread it into my sandwich. 😀 The way I have done my sandwich is the way I have eaten it from not one, but two joints downstairs our office. Both seemed to have followed the same format, so I stick to what I have known. The green chutney and the vegetables adds a very nice zing to an otherwise simple sandwich, and also not to forget the generous sprinkling of chaat masala, adjusted to how you like it! Bombay Masala Toast Sandwich
Ingredients
- 6 slices of bread
- 1 large potato boiled, peeled and sliced
- 1 onions sliced thickly
- 1 to mato sliced thickly
- 1 small cucumber sliced thickly
- Salt and pepper as required
- Chaat masala as required
- Softened butter as required
- FOR CHUTNEY:
- 1/4 cup mint leaves
- 1/4 cup coriander leaves
- 1 green chilli
- A dash of chaat masala
- A squeeze of lime juice
Instructions
- Grind the ingredients under "for chutney" with a little water till smooth. Set aside.
- Keep one bread on the plate and slather butter on it.
- Take another bread and slather half of the green chutney on it. Press down onto the buttered bread.
- Slather some more butter on the bread, and arrange half of the potato, onions, tomato and cucumber as much to fit.
- Sprinkle salt, pepper and chaat masala over it.
- Slather butter on the third bread and press down onto the vegetables.
- Repeat the same process with the remaining three slices of bread.
- Serve immediately along with french fries.

Though I live in Maharashtra have never tried street food much here.. blame it on the toddler ????This looks very tempting and also easy to make at home.. but not easy as a normal sandwich , it had got some work into it ????
