Bombay Masala Toast Sandwich

Ingredients
6
slices
of bread
1
large potato
boiled, peeled and sliced
1
onions
sliced thickly
1 to
mato
sliced thickly
1
small cucumber
sliced thickly
Salt and pepper as required
Chaat masala as required
Softened butter as required
FOR CHUTNEY:
1/4
cup
mint leaves
1/4
cup
coriander leaves
1
green chilli
A dash of chaat masala
A squeeze of lime juice
Instructions
Grind the ingredients under "for chutney" with a little water till smooth. Set aside.
Keep one bread on the plate and slather butter on it.
Take another bread and slather half of the green chutney on it. Press down onto the buttered bread.
Slather some more butter on the bread, and arrange half of the potato, onions, tomato and cucumber as much to fit.
Sprinkle salt, pepper and chaat masala over it.
Slather butter on the third bread and press down onto the vegetables.
Repeat the same process with the remaining three slices of bread.
Serve immediately along with french fries.
Notes
Normally, the bread is toasted with little butter to make it crisp once the layering is done. I am not font of crispy bread so left my sandwich as is.
