30. Blueberry Cheesecake Popsicle

 

Today is our wedding anniversary number 12, Alhamdulillah. Through all the ups and downs, we have managed to touch this number and InShaAllah, I am only hoping to see more better years ahead. 🙂 Reading through Huma’s latest post actually made me reminisce our initial years of marriage. With me knowing nothing about cooking – totally zero – HD took all pains to teach me the basics starting from how to make tea to how to make a decent curry. That time, blogs and YouTube wasn’t really well used, so it was all dependent on a call to umma and his training. Since I literally hated cooking, I would just do some adjustment and cook just anything, not even making sure whether it was palatable and he would silently eat it. I can’t believe now I have a food blog of my own! 😉 I totally miss his cooking now. The mad rush called life is sucking him in and he seems to have no time for his little hobbies. Once when we were on vacation, D had called us and was raving about the delicious beef curry that HD had made. When I asked him what he had added, he just said, “Whatever my hands could reach!” That’s how he cooks. He would just open the shelf door, stare into the spice section, and just pull things randomly and add into the curry in such speed that we can’t make out what he is actually adding and how much. But Alhamdulillah, at the end, it would just turn out delicious. I recently suggested to him that he must cook something on a Friday afternoon for rice, but what I got was a blank stare. 😕 I guess I have to be patient and wait till he comes into a mood to cook… 😀

 

The last popsicle after the Chocolate and Mint… Blueberry Cheesecake Popsicles – anybody who loves cheesecake would love this too! Totally cheesy, with a lovely purple hue and those tangy bites of blueberry in between – this one is a killer. I was really not sure how this would taste so I made just two popsicles and boy, I regretted it! My kids are really not fans of cheesecake so I expected them not to have this but as soon as they saw me clicking me this beauty, they became so impatient. I had to battle stretching hands while clicking. 😀 As soon as I was done, Azza picked this one up and Rasha took the one in the fridge and both finished off while watching TV. All I got was the last bit of Azza’s which she couldn’t eat since she was feeling full and I must say, they were amazing! Immediately after making these, I had to move on to the vegan diet so this has to wait till I make them again. You can substitute the blueberries with any berry of your choice and I am sure they would be amazing as well. Without much delay, off to the recipe…

Blueberry Cheesecake Popsicle

Course Ice Cream
Prep Time 15 minutes
Cook Time 4 hours
Total Time 4 hours 15 minutes
Servings 2

Ingredients

  • 1/4 cup blueberries
  • 2 tbsp sugar
  • 1/3 cup thick yogurt
  • 1/3 cup cream cheese

Instructions

  • Mix the blueberries and sugar and cook till pulpy. Set aside to cool completely.
  • Whisk in the yogurt and cheese till well combined.
  • Pour into two popsicle sticks and freeze overnight.

  3. Happy anniversary dear! Its the same story with a lot of family I know.. well including mine. My brother too cooks exactly like how your described HD! 😛 What magic they have in their hands! 😛 The cheesecake popsicle with blueberries is very interesting.. I did see a strawberry version on some blog and even bookmarked it.
