I must seriously say that I am so glad that there are many of my readers who look forward to the 3 back-to-back series on the blog. Ever since I started with smoothies a few months ago, I have been able to do one series every month without much trouble, Alhamdulillah. Sometimes, it is challenging to come up with a theme but somehow browsing through all the recipes does give me ideas as to how to go about it. 🙂
After a little contemplation, I decided to an interesting theme this month, and that is “pancakes”! I love pancakes, totally… If I were given a chance to make it as breakfast every other day, I would happily do it. Unfortunately, I have folks at home who will accept it only once a month and not more than that. 🙁 There are times when I make small quantities that I can eat over breakfast and evening snack! Hehe… I thought I would start with a healthy version of pancakes and then go on to the unhealthier ones – read APF! Hehe… 😉 Just as the name states, the pancakes have wholewheat and have oats, so definitely it gets tagged healthy. You can make this egg-less by skipping the egg and replacing it with and extra 1/4 cup of yogurt or even better, a flax egg, which you can make by mixing 1 tbsp milled flax with 3 tbsp water and leaving it aside for 5 minutes to become glutinous, just like what I did in these delicious nutty brownies. 🙂 Do stay tuned to the other two interesting pancake variations coming up…

Wholewheat Oats Pancakes
Ingredients
- 1 cup wholewheat flour
- 1/2 cup oats flour powdered instant oats
- 2 tbsp brown sugar
- 1 tsp baking powder
- A pinch of salt
- 1 large egg beaten
- 1/4 cup yogurt
- 1 cup milk
- 1 tsp vanilla essence
- Butter for cooking
Instructions
- Whisk the dry ingredients together.
- Add in the rest of the ingredients and whisk till no lumps.
- Heat a tawa, brush some butter and pour a small ladle onto the hot pan. As soon as bubbles start appearing, flip and cook for another two minutes. Cook till done.
- Serve warm with honey or anything that you please! 🙂
I wouldnt have guessed the theme! Pancakes are weekend affairs that is almost lost in my home. these days I prefer savoury for breakfast.. and even if I make these which I think the last time I made was for ifthar! 😛 it is only treated as a snack! 🙁 Your capturing skills are soaring high! love it. Yummy pancakes. I always make wheat and oat pancakes for my kids when I visit them. They love to have them with fresh fruit and chocolate or maple syrup.
