Plum Clafoutis

I can’t believe that I am doing the last post for 2021. Usually I do a throwback to the year. I am wondering how it has been. I quit my work finally in January this year and except for missing my salary – which is obvious! 😉 – I hardly had time to miss work. From going home three times to my long stay in the US for our summer holidays, this year has been super fast and busy. Yes, there has been overwhelming thoughts and doubts, but Alhamdulillah we got through it by His mercy. A lot of matters didn’t go as expected, but a lot of matters took place without us even thinking, just like our US visit. All I feel is a lot of gratitude for letting us have what we had over this year. The positives definitely outweighed the negatives and I am sincerely hoping it stays the same, more or less…

 

Covid is still not out of our lives and has slowly starting to gallop at an increased pace over the past couple of weeks. It is disturbing but I guess the world is starting to live with it now. On another note, we finally had some rains today morning. Such a relief from the constant warm temperatures! The rain and thunder ushered in some lovely breeze and made the perfect mood for some clafoutis. 😉 Today is the last post for the Bakeathon 2021 as well as for this year. I had baked clafoutis once before but it ended up an eggy mess. Now what is a clafoutis, if you are wondering? Clafoutis is a French dessert usually made with stoned fruits like peaches, nectarines, cherries and yes – plums, with a custard base, baked till done. It is actually an easy dessert to make if you get the egg and liquid ratio correct. Usually a clafoutis has no flavoring but vanilla and cinnamon flavors are preferred. My sister once messaged me to give her ideas to finish off her stock of preserved cherries – remember these muffins? All of a sudden, clafoutis hit my mind. She made some and she said that despite thinking about sharing it with the neighbours, the whole quantity literally disappeared. I assure you, it is that delicious…

 

I had these plums that HD’s cousin had got when he was staying over with his family for a week earlier this month. They were a little tart, so nobody was willing to eat it. That is when I turned a part of it into this dessert. Just like how my sister said, it disappeared from my kitchen too. D took two servings – yes, my parents are here on a holiday 🙂 – and I had to beg a spoonful to taste from the portion left for my sister. I have some more plums in the fridge and I am wondering if I need to make some more soon. 😉

I can’t express that sense of relief of having completed the posts for this month’s Bakeathon. I wasn’t confident of finising it, especially since my plans kept getting derailed but Alhamdulillah, I did it. Plum Clafoutis

Cook Time 40 minutes

Ingredients

  • 3 large plums
  • 25 gm butter, cubed
  • 1/4 cup sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup thick cream
  • 1/3 cup all purpose flour
  • A pinch of salt
  • 1 tsp vanilla extract

Instructions

  • In a 21 inch tart pan, cut and place the plums. Sprinkle one tablespoon of sugar over the plums. Place the butter in between, spread around.
  • Microwave for 4 minutes to soften the plum.
  • Meanwhile, preheat the oven to 180 degrees.
  • Whisk together the remaining sugar and all the ingredients in a mixing bowl till smooth and homogenous.
  • Take out the tart pan from the microwave and pour the sauce all over. It will be filled to the brim.
  • Carefully place into the preheated oven and bake for 15 minutes. Switch off the oven and leave the clafoutis in till the oven cools down.
  • This will help the custard base to set. Serve warm out of the oven...
