It feels like it has been ages since I participated in the Fantastical Food Fight which is hosted by Sarah. When this month’s theme was declared, I had to be a part of it. It seems the month of January is “National Omelet Month” in the USA and therefore the theme has to be related to it – omelettes! Now, how easy can that be! When eggs are a staple of your breakfast day in and day out, thanks for it being a powerhouse of good protein and fat, then making something for this theme is a very easy task, isn’t it? 🙂
If there is one food that makes HD happy at any time, then it is a sunny side up or an omelette. He would really love our style of omelette with onion, tomatoes and loads of bite, however I, being a lazy-head, always resort to a simple beaten eggs with a dash of salt and load of pepper. While I serve it to him, he looks more like a balloon, more from the irritation of not having made his omelette properly, but he knows that I really don’t care. 😀 Having said that I would like to cover a lot of basic posts in the coming months, this is one that needed to be on the blog and thanks for this month’s theme, it is finally up!
I kept aside my laziness and prepared this totally loaded omelette which is a staple on the roadsides in Malabar and the whole of Kerala. The ingredients are very straight forward with everything in your daily pantry, but altogether it makes the egg dish totally complete and full on flavor. The scene of the “kadakaaran” (shop keeper) whisking through the eggs vigorously, throwing in all the ingredients and then pouring it on the super hot iron pan with a thick layer of coconut oil is a sight to watch. The aroma which floats in the air comes as a bonus. So the hot omelette can be had as is, or accompanied with a hot Kerala porotta or a couple of toasted sweet bread, makes it a complete meal. Most of them add a cup of steaming hot chai to the meal and you are in foodie heaven. I am not joking – the experience needs to be experienced to understand it. 🙂 However, we can’t recreate the scene at home, so you just reminisce it and have your omelette at home in peace. Hehe…
I have seen recipes online for this omelette with coconut added in it. I have personally never eaten any omelette which has coconut in it and have never seen anybody add it in my personal circle. So I guess I will just ignore it and stick to what I know. Off to this super simple recipe…
- 1 small onion, sliced
- 1 small tomato, chopped
- 1 green chilli, minced
- 3-4 curry leaves, minced
- 3 large eggs
- A pinch turmeric powder
- Salt and pepper to taste
- Coriander leaves (optional)
- 2 tsp coconut oil (use more if you wish)
- In a bowl, add all ingredients except the coconut oil and using a fork, whisk well till the egg gets nice and fluffy.
- Heat a frying pan and drizzle the coconut oil.
- Pour the mixture over the hot pan and flatten. Cook on low flame till the top is firm to touch. Flip carefully and cook for another minute.
- Take out and serve hot with toasted bread, chapathis or parathas!
