An extremely refreshing mojito with frozen mixed berries, for a sunny day…
I hope you all like the Blackberry Ice Cream and the Raspberry Tarts as a part of the 3-back-to-back recipe series involving berries. Those posts were fresh though this mojito is from my drafts. I was introduced to this one by Hiba during one of her cooking classes. When we reached her place, we were greeted with this delicious mojito. My girls, who are usually not very keen on cold drinks, totally loved it and went for a few more servings till I stopped them. Hehe… After that, whenever we get fresh or frozen berries, they make sure to eat my head to get soda to make this drink for them.
I have used mixed frozen berries here and hence I have just soaked it in sugar and lime juice and mashed it lightly before going ahead with the rest of the process. If you are using fresh berries, it is advisable to convert it into compote, cool completely and then go ahead with the rest. The mojito uses carbonated drinks as its base, so you can use your own mix – one is as I mixed below, but another one would be ginger ale with sparkling water. Whichever way you use to make it, it is still refreshing and even keeps your hunger at bay since you will have a little bit of chewing to do with the berries and the mint. Hehe… Off to this simple recipe…
Mixed Berry Mojito {Non-Alcoholic}
Ingredients
- 1/2 cup mixed frozen berries thawed
- Juice of 2 limes
- 1/4 cup sugar
- 330 ml 7-up
- 500 ml soda
- A handful of mint leaves muddled
Instructions
- Mix the berries, sugar and lime juice in pitcher. Smash it with a spatula and allow it to sit for five minutes or till it oozes of its juices.
- Add the rest of the ingredients and mix.
- Serve immediately or chill till the time of serving.
