Mango Popsicles


 

So just like that we are past eight months of this year. 2020 has literally been a roller coaster ride for many of us. I just happened to read while scrolling through my IG feed – “We have spent enough of 2020 waiting for the storm to pass. It is time to start learning dancing in the rain.” How true can that be! Here, even though the cases are not really high, we are constantly reminded to go on with our life, by taking into account all the precautionary measures required. The world has literally been toppled by the Covid pandemic, so have many lives that changed with a span of days into something they wouldn’t have imagined. Just tells me that our plans are never meant to be hundred percent in place. Since the year may go on with this virus by ourside, at the moment, it feels best to learn how to co-exist and move on with our life…

 

Mango season is almost coming to an end. I pick up Pakistani mangoes wherever I can find them, but they are slowly disappearing off the market. I made these popsicles when I had all leftovers – one mango I can’t afford to share with 3 adults plus 2 almost adults, condensed milk at the fag end of the tin and whipped cream from frosting a cake.  Azza was eating my head to make something cold and that is when I converted it into popsicles. I had bought some silicon popsicle moulds long ago and these made pretty looking yellow popsticles, that could be wrapped and presented. The girls really enjoyed all the four and we didn’t even stand a chance to eat it, except for begging for a bite from theirs. Happens with kids, right? 🙂 Off to this recipe…

Mango Popsicles

Ingredients

  • 1 mango peeled and cubed
  • 2 tbsp condensed milk
  • 1/4 cup whipping cream
  • A dash of cardamom powder

Instructions

  • Blend all the ingredients to a smooth paste. Pour into popsicle moulds.
  • Freeze till done. Enjoy!
