We are on a public holiday today… the first for the year! Being working, I always look for holidays and in this part of the world, there are just countable holidays in a year. With Ramadan fast approaching, most of us tend to do a thorough clean up of the whole house so that there is not much of cleaning to be done during that time, and I am no different. I wish I could spend a holiday not doing any cleaning as such… Sigh…

 

Coming to today’s post… Sometimes, I feel I am seriously digging out graves. This pannacotta was cooked exactly a year ago! I guess it’s time to make it again for the family, since they loved this so much. I made this when this recipe was declared for the week’s Fondbites bake-along, even though it was not something to bake! I can understand why this recipe was selected – it is simply irresistible. Anything with mangoes in it is always a winner, so pannacotta would be no different. I love to make pannacotta, and there are a few of them on the blog already, the vanilla one and a rose flavored one. This is another lovely addition to this. The recipe is adapted from here and the beauty of this is instead of milk, coconut milk is used and you can imagine what type of tropical flavors are incorporated into this delicious pannacotta. The mango jelly topping is like icing on the cake, which you may skip if you feel lazy, but I would suggest you to just go make it – it add a totally different dimension to this decadent dessert. Mango Pannacotta

Ingredients

  • 1 large mango
  • 300 ml cream
  • 200 ml coconut milk
  • 3 tbsp sugar as per sweetness
  • 1/2 tbsp gelatin melted into 2 tbsp water
  • 1/2 tsp vanilla essence
  • For jelly:
  • 1 small mango
  • 1/4 cup water
  • 2 tbsp sugar
  • 1/2 tbsp gelatin melted into 2 tbsp water

Instructions

  • For the pannacotta, peel the mango, chop and grind into a smooth pulp.
  • Combine the cream, coconut milk, sugar and vanilla and bring the mixture to heat.
  • Add in the mango pulp and melted gelatin and mix well and cook for a few minutes till it looks an amalgamated mixture.
  • Pour into three large dessert bowls. Allow it to set in the fridge for 30 minutes.
  • Meanwhile, prepare the jelly, by making pulp out of the small mango. Combine all ingredients in a saucepan and heat gently till the gelatin is melted and completely mixed in. Allow to come to room temperature.
  • Spread spoonfuls on top of the pannacotta. Chill for a couple of hours till well set.
