Just yesterday I mentioned my jack-fruit getting spoiled, so you must be wondering from where this ice cream post? If you have read it carefully, I have mentioned that one of the post is from my drafts. So this is the post… 😉
I don’t eat jack-fruit. I know I would get beaten up for this, but then that is the truth. I used to eat a lot of jackfruit when small. Each time we go home, my mattamma would reserve at least a couple of jack-fruits for us. She had a lot of jack-fruit trees on her plot, more than mango trees in fact, and they yielded the sweetest jack-fruits I have ever eaten. She still does have some trees, but not as much as it did before. She would patiently sit and remove the flesh from inside, and as though we were in a competition, my sister and I would constantly eat till we got sick on our stomach.
On one such occasion, the sickness went off to another level. I landed up with severe diarrhea and vomiting and was bed ridden for a couple of days. I don’t want to blame it on the jack-fruit but I couldn’t think of passing the blame onto anything else. Those thoughts are still in my mind. Even though I get enticed by the smell of a ripe “chakka”, I still can’t get myself to eat even one pod. 🙁 But I love the kuru or the seed of it, and can devour it in any way. You can refer to the recipes that are already on the blog! But let’s come back to this ice cream for now…
At home, HD loves jack-fruit so does Azza. Rasha is not very fond of it, she may eat just one or two. Last year, umma had sent half of a huge ripe jack-fruit, which I had to disseminate almost immediately upon landing. Even though my blogger head wanted to make milkshake and cake and what not with it, I could only manage to hide enough to make this delicious ice cream. The rest were flicked from the box within an hour. This year, till I get the next ripe jack-fruit, my hopes will stay unfulfilled… 🙁
Anyway, this ice cream uses the tried and tested whipped cream and condensed milk combination. I coarsely ground the jack-fruit and used our super spice, cardamom to flavor this ice cream. Just four ingredients and you have an amazing ice cream with a light yellow shade in hand! It was studded with specks of jack-fruit and even the hater in me totally loved how this tasted. HD loved it so much that he ended up taking some in a cup for his staff who was waiting for him, and then I get a message, “Ethaa, awesome ice cream!”
Only one thing… I should have added some caramelized cashew nuts for an extra crunch, but then who cares? 🙂 Off to this simple recipe…
Jackfruit Ice Cream
Ingredients
- 1 cup jack fruit packed
- 1/2 tsp cardamom powder
- 2 cups whipping cream
- 1/2 tin condensed milk increase as per sweetness
Instructions
- Grind the jack fruit and cardamom powder till smooth. You may leave some bites.
- Whip the cream till soft peaks. Add the condensed milk and beat till smooth.
- Fold in the ground fruit mixture. Transfer mixture into a freezer bowl and freeze till set.
- Keep out for 15 minutes, scoop and serve.
