I had initially kept this post on schedule to complete before I travelled from US. But the last few days were a haze. I really don’t know how time flew. The PCR test, the last minute shopping and then realizing that our stuff was overweight, all the anxiety that followed in the 12 hours before we travelled – it was totally a ride. Finally, I am back in my abode, just like I have woken up from a dream.
The 70 days we spent in USA rates easily as the best time I ever had. It was only when I was travelling back, I realized how far my sister is away from me. The physical distance sometimes feels difficult to bear, but in my heart, I know she is having a comfortable life there and I sincerely feel happy for her. Our travel was smooth and we reached home well. Apart from the jetlag, and the general laziness that comes with putting the luggage all into place, it has been fine. InShaAllah, life will slowly get back to how it used to be…
I think I will just leave you all with a simple yet delicious cold coffee recipe that I discovered from here. Irish Cream always linked to alchohol, but if you can have the same without it, then why not? The concoction is delicious in itself, with a beautiful mix of evaporated milk and whipping cream spiked with coffee, cocoa and vanilla flavors. If you have a party or a small get together coming up, then you can make this mix in advance and refrigerate it. Then make your coffee close to when your guests arrive, mix and serve! Voila, I can assure you you will get some rave reviews.
Though I don’t give the girls much coffee, I allowed this and they really loved it. I had it without any extra ice, but add ice if you would like it to be… As I finalize this post to publish, I realize that my sister would have enjoyed this, since she loved anything to do with iced and coffee… hehe…
Irish Cream Coffee {Non Alchoholic}
Ingredients
- 1 cup evaporated milk
- 1/2 cup whipping cream
- 1/4 cup milk
- 2 tbsp sugar
- 1 tbsp cocoa powder
- 1 tsp instant coffee powder
TO SERVE
- Coffee and ice
Instructions
- Blend all ingredients till smooth. Refrigerate till serving time.
- To serve, mix 1/3 cup of Irish Cream with 1/2 cup of hot coffee and top with ice.
