It is so very true that necessity IS the mother of invention. It is only when you try to finish off some grocery with you, which you very well know may not push out in the near future, that you invent ways to finish it off without much fuss. During last Ramadan, I had bought a packet of Qamarddin, which is basically preserved dry apricot sheets, to make juice out of it. Even though a tad bit time consuming, I used to love the end result, though nobody in my house were very fond. Once Ramadan got over, I knew for sure the remaining sheet is going to lie in the refrigerator and expire to glory. That is when I though, why not utilize it into a pudding. I googled for a recipe online and got one recipe, which unfortunately gave me something which looked like a juice rather than a pudding!…
Chakkara Gothambu ~ Malabar Wholewheat in Jaggery
Actually speaking, breakfast is one meal which we do not have that heavily in this part of the world. With traffic starting as early as 6:30, you are forced to rely on quick fixes like oats, upma and the like to fulfil your breakfast necessities. It is only during the weekends that breakfast is lavish, but still it’s never the dosas and the idlis, but more filling variety, you can say. One of my mom’s favorite breakfast meal is what I am featuring today. Due to the ease of making it, it’s my favorite too. The thing is that you have to remember to soak the whole wheat the previous night and the remaining process is a cake walk, thanks to pressure cookers. I always wonder, what I would have been without a pressure cooker!!! OK, without much ado, off to the recipe… Updated on February 28,…
Easy Coconut Milk Pudding
This was one dessert I had made with all leftovers I had. It was a depressing day – my whole family had gone to India and loneliness was creeping in. And me, being the sweet tooth, naturally went on to depend on a dessert. This was whipped in no time and set in very little time as well. Was really spongy and melt-in-the-mouth. Would definitely make this again… Updated on March 12, 2016 with new pictures! 🙂 The only difference is I made it in a mould instead of pouring it into a loaf pan. The old picture is below… Update on March 13 – after uploading the new pictures, I have got a few queries regarding whether the agar agar mentioned in the recipe is enough to hold the pudding. Yes, it will just hold the pudding, but it won’t be sturdy enough. If you…
Carrot Sago Semiya Payasam
This is a recipe close to my heart. Why so? Because I made it up by chance. 🙂 Sometimes, what you concoct without realising how the end result will look like turns out to be the best thing that you have done in your life! I would rate this as my best payasam effort so far. It is a mix of semiya payasam, sago payasam and carrot payasam put into one and the end result was really fantastic. We first had it as payasam then we waited for it to be solidified and had it as dessert for night as well. I had cooked this last Eid and whoever had it, really appreciated it, making me feel on top of the world. Updated on June 7, 2015 with new pics and improved recipe! 🙂 Old Pic… 🙂 Carrot Sago Semiya Payasam Save Print Prep time 15…
Tuna Cutlets
On a cold day, spicy snacks with a cup of hot chai, coffee or even better, hot chocolate is a big yes. However, as I am working, doing this is quite restricted to the weekends. These are very easy to churn out, as what is used does not require much of cooking, except for the potatoes. This is comfort food at its best, as far as I am concerned… 🙂 Updated on December 1, 2016 with new pictures: I can’t believe that I did a post with just hardly three lines as text during the first month of blogging… 🙂 Tuna cutlets are definitely my favorite anytime, mainly due to the ease of making it, as well as the delicious taste anytime of the day. Glad to revisit back this post after a long time with better pictures… Old picture below… Tuna Cutlets Save Print…
Haupia – Hawaiian Coconut Milk Pudding
I love easy desserts. There’s nothing to beat the feeling of being able to make something quickly and dump it into the fridge, especially when you have sudden guests coming. I got this recipe at the back of a coconut powder box and was really not sure how it would turn out to be. But to my pleasant surprise, it was a nice and simple tasting dessert. Pazham Nirachathu – Stuffed Plaintain
I will again go for a complete Kerala snack – in fact, this item is more known in the Malabar (north side of Kerala) area than anywhere else. Plaintains are available in plenty in Kerala and it is quite nutritious for adults and children alike. Some information from Wikepedia: Plantain is a carbohydrate source. Its utilizable protein content as percentage of calorie ingestion is higher than sago and cassava, but is much lower than other staples such as yam, maize, rice, potato and wheat. On per gram consumed basis, plantain’s essential amino acid concentrations are very low, even lower than cassava. The low fat content of plantain, coupled with its high starch content, makes it a possible food for geriatric patients. It may also be a possible food alternative for people suffering from gastric ulcer, coeliac disease and in the relief of colitis.[13] Let’s get going to the recipe now. This is one way…
Chakkarkuru Mulakittathu – Jackfruit Seeds in Spicy Sauce
Let this be my first post on this blog. My favorite side dish for rice. I am seriously not fond of jackfruit. When I was young, I got an upset tummy due to overeating of jackfruit during one of our vacations to India, and from then, I stopped eating it completely. But my love for its seed has been undying. Whenever the seeds are dried, my mom ensures she makes this as she knows I love it. I also make it whenever I have the dried seeds avaiable, but unfortunately I got only a single chance to make it this time, as I didn’t have much of the seeds.Off to the recipe now… Linking it to Mom’s cooking event by Pure Vegeterian Bites… * Updated on April 6, 2013 with a better picture! 🙂 Linking this to the Mommy ka Magic event by Kachus Delight… Chakkarkuru Mulakittathu – Jackfruit seeds…
