Bhindi/ Ladysfinger Kurma

Ingredients

  • 450 gm lady's finger cut into 1 cm peices
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 large onion thinly sliced
  • 1/2 tsp turmeric
  • 1 cup curd
  • 1 cup water
  • 1 tsp chilli flakes
  • 1/2 tsp garam masala
  • For grinding:
  • 3/4 cup coconut
  • 3 green chillies
  • 1 tsp ginger paste
  • 3 shallots chopped
  • 1 tsp garlic paste

Instructions

  • Wash the lady's finger and pat dry. Cut into 1 cm peices.
  • Heat a large frying pan and pour 1 tbsp oil. Fry the lady's finger in it till it becomes crisp.
  • Grind the "for grinding" ingredients to a smooth paste and set aside.
  • Meanwhile, heat your saucepan, add the remaining oil. Once it heats, splutter the mustard seeds.
  • Add the onion and saute till light brown.
  • Add the fried lady's finger and give it a nice stir. Add the turmeric powder and saute till raw smell goes.
  • Add in the curd, ground masala and water and cook on simmer for around 5 minutes.
  • Finally sprinkle the red chilli flakes and the garam masala, and adjust salt.
  • Serve warm with rotis or rice!!!
