Alhamdulillah, Ramadan is here… Thinking about how this month was last year gives me literal goosebumps. We had complete work at home with no masjids at all and everything that we did as a family with my B and family around with us, is still so fresh in my mind. I sometimes can’t believe that we went through that particular phase of our life, without even realizing much. This year, it is so much better, however it isn’t still complete. We still can’t see the large tents close to the masjids, which caters to hundreds of people to quench their hunger and thirst during the Iftar time. The prayers have become very truncated, but Alhamdulillah, there are still prayers when there was nothing last year. I guess we just need to be content with whatever has come our way despite the tough times… May Allah bless us with a month with Barakah and Rahma… Aameen…

 

Today we also celebrates our 17 years of togetherness. I am really not in a mood to write too much about it, because as far as I am concerned, I am just content in my marriage. We may not have the best romantic times or on the same page all the time, but we still function as much as a team as we have done all these years. The girls are growing up, life is a constant ups and downs, that needs a lot of patience to go through it all. All I make dua is to keep us together, make us better human beings and help us be better parents to our beautiful girls… Since it is Ramadan, I have no intention of baking anything, but I may end up cooking a special meal… 😉

I haven’t planned much of posts for this month, but as usual, I will be adding some easy recipes that can be tried during this month or anytime in the year. After all, I would like to remind that Ramadan is not about eating, but about managing a lot of emotions and thoughts, and that includes our hunger and thirst. 🙂 This recipe is a super easy one, that I found out while flipping through one of my cookbooks. The simplicity of it stuck to me. After all, it utilizes my favorite fruit too!

 

The usual recipe has a sauce made in a small quantity of alcohol, which of course has been skipped. The recipe is very simple to our kaaya vaatiyath except for some differences. Of course the steps are very simple – toss bananas into melted butter and cook with the sugar and spices till nice and gooey. This won’t have much sauce, but if you would like some, I would suggest adding some orange juice at the end, just before taking it off the pan. I just went ahead and enjoyed it warm with a sprinkling of roasted almonds. I would have really loved a scoop of ice cream on top. 😉 Off to this super simple recipe…

Banana Foster {Low Fat | Non Alcoholic}

Ingredients

  • 2 ripe bananas
  • 2 tbsp brown sugar increase as per need
  • 1/2 tsp cinnamon powder
  • 20 gm butter
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  • Cut the bananas in roundrels (like I did) or in length. Toss the cinnamon and brown sugar on it.
  • Melt butter into a saucepan. Add the bananas and cook on both sides till caramelized.
  • Add the vanilla and salt and switch off.
  • Divide into two bowls and serve with a sprinkling of nuts, or with ice cream, cold custard or caramel.

    Rafeeda, rest assured things will change as you get older even though you both may not be on the same page at the moment. Happy Anniversary. Coming to Banana Foster, had no idea that it is so easy to make. Must try it out as I have all the ingredients at hand. I think I will indulge by adding some ice cream 🙂

  3. I have not yet had banana foster, actually to tell you the truth we hardly use bananas in our cooking/baking. But looking at yours definitely I would love to have a portion right now. Sounds so delicious and easy to prepare.
