Anything deep fried is so synonymous to rains, right? I guess it is the Indian mentality – we want some deep fried goodies and some strong chai to go with the sounds of the rain. 🙂 Since these posts are scheduled, I am sincerely hoping I get to enjoy some rains. Last year, during this time, it was really bad. Off the 30 days I stayed, I saw good rains for hardly a week. All the remaining days were either moody or just plain hot, with clear skies, making you doubtful if you have landed during the monsoon season. 😕 My parents were saying about how heavy the rains were in June and my cousins were raving that it was good enough in July, so as this post goes public, I am hoping for the best. 😀

 

Meanwhile, I leave you with these delicious pakodas – one of my personal favorites in the pakoda family once ulli pakvada is done, hehe… I normally chop the vegetables in the chopper so that the kids can’t make out what is there in it, but feel free to chop them into chunks if you love bites of it. 🙂 Add whatever vegetables are there in your pantry and enjoy these with a cup of hot chai at any climate, it doesn’t matter… Most of the time, I deep fry when I really crave for it, irrespective of whether it is chilling cold or smoking hot outside! Hehe…

Mixed Vegetable Pakodas

Ingredients

  • 1 carrot
  • 1 potato
  • 1 onion
  • 1/2 cup shredded cabbage
  • 1/4 cup frozen sweet corn
  • 1 cup chickpea flour besan
  • 2 tbsp rice flour
  • 2 green chillies chopped
  • 1 sprig curry leaves chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • A pinch of hing
  • A pinch of baking soda
  • Salt and pepper to taste
  • Oil for deep frying

Instructions

  • Chop the carrots, potato and onion in a chopper.
  • Add all ingredients and mix well. Add little water just to bring the batter together.
  • Heat oil till smoking hot. Drop spoonfuls into it and deep fry till both sides are golden brown.
  • Serve hot as is or with ketchup.

    I love pakodas very much they are an easy to make and yummy snack recipe. Piping hot pakodas with hot cup of chai make it worth a cool evening. Nice idea of throwing in veggies readily available in kitchens to make a mixed vegetable pakoda.
