Mixed Vegetable Pakodas

Ingredients

  • 1 carrot
  • 1 potato
  • 1 onion
  • 1/2 cup shredded cabbage
  • 1/4 cup frozen sweet corn
  • 1 cup chickpea flour besan
  • 2 tbsp rice flour
  • 2 green chillies chopped
  • 1 sprig curry leaves chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • A pinch of hing
  • A pinch of baking soda
  • Salt and pepper to taste
  • Oil for deep frying

Instructions

  • Chop the carrots, potato and onion in a chopper.
  • Add all ingredients and mix well. Add little water just to bring the batter together.
  • Heat oil till smoking hot. Drop spoonfuls into it and deep fry till both sides are golden brown.
  • Serve hot as is or with ketchup.
