Having come after vacation, the feeling of loneliness is on a high. Life in a metro city is always fast paced. People are all running behind a lot of things in their lives – important or not, is not the matter. Anywhere you look, everybody is busy. From stay-at-home mothers to businessmen… Nobody has time. Our connections are all becoming virtual, with hardly anytime for personal interaction. Even back home, life is moving towards the same style in cities, however the village sides are still catching up on it and I sincerely hope they really don’t, but considering that mobile networks are becoming better, it will be a case in the near future. The feeling of having a human to fall on when you need support is precious, which technology cannot replace. No wonder why stress and anxiety related disorders are on a high now…
By the way, I moved from vegan to vegetarian when I went back to home, Alhamdulillah… I had always mentioned missing lassis in the process and now I am back to having yogurt! 😉 Sharing with you a recent favorite – Punjabi Lassi is meant to be thick because of more yogurt and limited liquid going into the lassi. You can flavor it any way, but I added a dash of rosewater and some cardamom – undoubtedly two of my favorite flavorings. This lassi is super thick and creamy and it literally leaves you with a white mustache once you are done drinking with it! 😉 If you love thick lassis, you could check out this rich Peshawari Lassi too… Off to the recipe…
- 1½ cup thick yogurt
- ½ cup cold milk
- 2 tbsp sugar
- A fat pinch of cardamom powder
- 1 tsp rose water
- Saffron for garnish
- Whisk the yogurt till it gets frothy.
- Add the milk, water and sugar and whisk till the sugar is dissolved.
- Add the cardamom powder and rose water and beat again.
- Serve cold in tall glasses, garnished with saffron.
