You don’t always buy new ingredients, expecting the folks at your home to accept it wholeheartedly. One such ingredient was couscous. Couscous is a grain like substance made with durum wheat, and is so close to semolina, except that it is in a more rolled form. Many Arab and North African countries use this as a staple in their cooking, instead of rice or wheat. Couscous available now in the market is more of the no-cook variety – all you need to do is to soak it up in hot liquid for sometime and it swells up. It is that easy! I personally feel it is more of an acquired taste.

 

I bought a small box of couscous out of curiosity and used up the whole thing to make this delicious and easy salad. All that had to be done was to soak up the couscous in hot chicken stock and then mix up your vegetables. And then eat it! Hehe… Even though I loved it a lot, nobody, even HD who normally loves new trials, did not like the taste of it, so I ended up eating the whole batch. Like I said, the taste is more acquired. InShaAllah, hopefully I make this soon with a tangine dish, Moroccan style! πŸ˜‰ Off to this easy recipe…

Pomegranate Couscous Salad

Ingredients

  • 1/2 cup couscous
  • 3/4 cup chicken stock
  • 1 pomegranate deseeded
  • 1 cucumber diced
  • 6 cherry tomatoes halved
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Boil the chicken stock.
  • Pour it over the couscous and allow it to rest for five minutes. Fluff it up with a fork.
  • Add in the remaining ingredients and toss it up.
  • Serve immediately.

  4. So true thats why i refrain from picking up new commodities….colouful salad ,yes its an acquired taste but is awesome when paired with non veg…see my nonveg genes always crave . ????????
