Pomegranate Couscous Salad

Ingredients

  • 1/2 cup couscous
  • 3/4 cup chicken stock
  • 1 pomegranate deseeded
  • 1 cucumber diced
  • 6 cherry tomatoes halved
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Boil the chicken stock.
  • Pour it over the couscous and allow it to rest for five minutes. Fluff it up with a fork.
  • Add in the remaining ingredients and toss it up.
  • Serve immediately.
