Even though I am not a fan of oats as such, most of the time I resort to it as it is the easiest breakfast that you can make and ensure that you have some. With so many reports emphasizing on how important breakfast as a meal is for our overall health and weight maintenance matters, it becomes imperative to have a filling breakfast, how much every fast life may be. That reminds me how breakfast is a lavish affair back home, and how sometimes meals are divided into two – a glass of sulemani with ripe plantains, boiled eggs and biscuits to begin with and moving onto a spread which can be a full meal in itself. In a fast paced life like that of UAE, we are mostly dependent on quick fixes like cereals and oats.

 

Sharing with you today, a vegan breakfast which is easy to make, is packed with goodness of coconut milk and chia seeds and topped with some sweetened apples, to add to the crunch! I got this recipe from an oats feature in a magazine and totally loved how this one turned out to be. Top with your favorite nuts for an extra crunch. I would suggest to use fresh coconut milk to cook this, since it adds to a lovely nascent taste. No, not that canned coconut milk is not good, it is but fresh is always best! 🙂

Chia Oatmeal with Cinnamon Apples

Ingredients

  • 1 cup thin coconut milk
  • 3 tbsp rolled oats
  • 1 tbsp chia seeds
  • 1/4 cup water
  • 1 apple diced
  • 1/2 tsp cinnamon powder
  • 1 1/2 tbsp raw sugar

Instructions

  • Add the chia seeds to water and allow it to soak for around 10 minutes till plumped up.
  • Combine coconut milk and oats in a saucepan and cook till done.
  • Switch off the flame and add the chia water. Mix well.
  • Toss the diced apples with cinnamon powder and sugar.
  • Put the oatmeal into a bowl and top with the apples. Enjoy!

  7. Ah! never had coconut milk with oats! And I have to use coconut milk powder or can, I still don’t buy the fresh coconut from here. Both the times I got, it was smelling bad so I gave up. But I am going to try this, a change is always welcome! 😛
