Be My Guest – Wholewheat Carrot Cake

So quickly the third Saturday of the month comes by! Before I finish coordinating over a guest post, drafting and scheduling it, and then breathing a sigh of relief that the one for the month is done, it is already time for the next guest post. The way time seems to be flying is quite scary… Looking at the date, we have hardly another two and a half months for 2015 to end! When did this year start anyway? 😮
As we enjoy a long weekend over here due to the Islamic New Year holiday getting clubbed along with the weekend – we are off since Thursday, I come to you with the guest of the month. Today, I have with me Hiba who blogs at Coconut Chutney. I love the name of the blog – gives a very south Indian touch to it! A casual chat with her opened up so many similarities between us – our year of birth, our childhood and schooling being in the UAE, and finally ending up being here as well! It feels nice to connect with somebody who is linked in many ways to the type of life that you have had. Recently, she celebrated her first blog anniversary… I sincerely wish her many more to go… 🙂
Before welcoming her with her posts, I guess I must let you know of a couple of recipes that I have already bookmarked at her place for me to try – one being the Ari Payasam and the other one being the Dry Fruits Shake. Without much delay, let me pass on the podium to my guest…

Wheat carrot cake ,  wholesome goodness . A super kids tiffin choice served as snack . This recipe is really good as yields so much in quantity.

 

Hi Asalamualaikum to all ,I am Hiba,:) mmm to start with, I am happy to blog as a guest  for Rafi’s humble blog , it is a space i truly enjoy ,I never knew how we became friends and I call her my big virtual sister:). I wanted to give something special for her blog and this is my umma’s favorite classic cake. This is a special post for me, as this is my first guest post. She is one of the most versatile blogger’s I have met in the virtual world. Her blog is one of the many blogs I keep following on daily basis. An all-rounder, working mother of two wonderful girls, a homemaker and a blogger for many years, is not an easy task, a job well maintained. I adore her spicy spirit 🙂 The blog is filled with simple and awesome recipes ,and equally good reading content. She needs no introduction to anyone, to say . My blog coconutchutney.in has just turned one year. It is a space I enjoy posting my special recipes and my passion for cooking. I began blogging out of excitement to post all recipes online so I can maintain it anywhere I go ! As residing in Abu Dhabi , I get to cook and explore the wide range of the culinary world ,and also getting to know a whole bunch of bloggers is truly delighting . But mostly I love baking and you will find more of cakes in my humble blog . My blog will bring you more of Kannur food ,my hometown ,and my mom’s home cooked delights .

 

The recipe below is a wonderful one. I baked it and I had to distribute it to everyone . Yes it is a large cake. I gave to my neighborhood friends. Healthy wheat flour carrot cake . I must say and you will be surprised ,you do not need an egg beater to do the job, a normal grinder will do. But I have used my beater, here. The list might be long , but very easy cake. Do not mind the task of grating of the carrots for the cake.

Preparation time 15 minutes
Cooking time 1 hour 15 minutes ( depends on oven)
Some take only 1 hour

 

Serves a party for 10!

2 and 1/2 cups grated carrots
5 medium eggs, separated yolks and whites, at room temperature.
1 and 1/2 cup butter, at room temperature.
2 and 1/2 cups, wheat flour / atta, sifted .
Orange rind of two oranges
2 cups powdered sugar.
1/4 tsp salt
1/4 tsp bicarbonate soda.
1 tablespoon vanilla essence
For the caramel
1/2 glass boiling water + 4 tablespoon sugar.

 

 

Method

 

Line the baking PicMonkey Collage1Pinpans with parchment paper. Butter the sides too. Preheat oven to 200 c.

 

Heat a pan, on high flame. Add sugar. Left it brown then add water to it.
Set aside to cool.

 

Separate the eggs, beat the egg whites (using an egg beater) to fluffy. Keep aside.
In a large mixing bowl, add the yolks ,butter, atta/wheat flour, sugar and caramel . Beat for 10 minutes. Add the carrots, orange shredds, bicarbonate, salt, vanilla essence. Stir using a wooden ladle/spoon.
Add the  egg whites slowly in folding motion.
Bake for 1 hour in 200c .
Check the cake at this point, if not done bake for 15 minutes more..

I am shocked at one more resemblance – this is her umma’s carrot cake, my umma also makes lovely carrot cake, the recipe which I have already shared in this blog! Now I am wondering, if Malayalee mothers of that generation who resided in the UAE always made carrot cakes. 😉 Hehe…
